Salmon and Rocket Sandwich

Salmon is most probably my favorite fish – and it is good for you with all the Omega 3 oils and such. So when hubby says he’s hungry, I go crazy.
Today I made this salmon sandwich and he loved it, and seeing that he is suffering from the dreaded ADD syndrome, the Omega 3 oil is SO good for him.

Salmon and Rocket Sandwich

Ingredients

2 slices smoked salmon
2 heaped tablespoons of cream cheese
1 small handful of capers – rinsed under cold water
fresh rocket
2 slices of fresh ciabatta bread

Toast the bread lightly. Chop the capers and mix in with the cream cheese. Place the two slices of bread on a pretty plate and place some rocket on each slice of bread.
Top with the cream cheese and lastly with the salmon. Enjoy!

Whatever you make for the family, make it pleasing to the eye and for goodness sake, set the table and enjoy your food – not gobble it down in front of the TV!!!!

    Dis soooo lekker om alles van jou te lees Nina! Jy is die heel beste. Ek sal graag jou resep vir tamatie en soetrissie met mieliepitjies wil he. Jy het dit eenkeer vir my verduidelik en ek het dit gemaak. Perfek! Nou het ek vergeet hoe???
