Sugarfree treats for diabetics are always hard to find and then if you find some, they are always loaded with aspartame and other ingredients that is not good for you.
I am seriously trying to eat less sugar and my friend's husband is already a diabetic so I tried this recipe this morning to just satisfy our sugar cravings now and then.
Diabetic Date Sweets
2 x 250gr pitted dates
100 gr butter
200 ml boiling water.
Soak the dates for about 30 minutes in the water. Blend the mixture in a blender( or use a stick blender) until it is a runny paste.
Add about 4-5 cups Kellogg's Rice Krispies. You can also add nuts or raisins or just keep it simple.
Roll in little balls and then roll it in toasted coconut.
Keep in an airtight container.
I like it a lot. JUST REMEMBER- too much of a good thing is also not good!!!
