Dad says: "Let's have meat tonight!", but that is at 4 o'clock and I did not have any red meat available so I had to opt for chicken. Well the chicken was so delicious, that it will definitely feature on our menu again.
Chicken and Mushroom Casserole
4 de-boned and skinless chicken breasts
4 tbls chicken rub (I used Melissas)
olive oil
500ml dairy free cream(I used Cremendous)
1 punnet mushrooms,halved
2 chopped baby leeks
1 tablespoon corn flour
100ml white wine
Salt and pepper to taste
Mix chicken rub with olive oil to make a paste and rub into chicken. Leave in fridge for 1/2 hour
Cut chicken breasts into cubes and place in oven proof dish.
Add cream
Add mushrooms
Add leeks
Mix cornflour with white wine and add.
Mix all the ingredients together and bake for 40 min. Add salt and freshly ground pepper to taste.
Serve with brown rice and lightly steamed green beans.
