After a weekend of no-cooking, my daughter asked me this morning: "Mom, when can we have proper food again?" Well, as they say, out of the mouthes of babes....... Dad felt like curry, but.. no meat. So I made a quick bean curry. I served it with rice and veggies.
Fragrant Bean Curry
Ingredients
1 tsp fennel seeds
1 tsp dried coriander seeds
1 tsp mustard seeds
1 tbs curry powder(adjust to your taste)
1 tbs vegetable oil
1 onion chopped
1 clove garlic, finely chopped
3 large potatoes, peeled and cut up in blocks
3 tins of beans(your choice)
1 cup vegetable stock
1 tbs flour
1 tbs vinegar
1 tbs sugar
2 tbs tomato paste
1 tbs chutney
salt & pepper
1.Dry-fry spices in pan and grind.
2.Heat oil in pot and brown onion, garlic and spices
3.Add potatoes and stock and cook for 8-10 minutes
4.Add beans and cook for another 5 minutes
5.Mix flour, tomato paste,sugar, vinegar and chutney and stir into bean mixture.
6. Season well.

lori lynn - tanks for visiting and the nice comments. The "cracker" is called a poppedum and in SA we associate it with Indian food as a side dish - I bought it at an Indian shop.
That is real food. I love beans, will definitely try this.

oh, how i love beans. i've never been brave enough to try curry, but i may have to give this one a shot. also, i will now be on the lookout for poppedum--it looks deliciously crunchy!
