
Today must have been the hottest day ever and I spent most of the morning at my children's swimming gala. Somehow I had this urge to make risotto and so I did. The variety in the vegetable section of the fridge was a bit limited, but I found.........
Asparagus....

and Butternut......
......so I made just a basic risotto with onion, garlic, white wine, chicken stock, cream and parmesan cheese. I served it on grilled asparagus and added oven roasted butternut just to perk it up a little. A wholesome meal, yeah ,I think so.
