Tomato Salad with Fresh Mint and Danish feta


Here it is, my first organically grown tomato. Isn't she a beauty? There definitely is something sensual about her shape, don't you think. As this was the only tomato ready for picking I couldn't really experiment with cooking, but I did have fun with the camera instead. My family loves tomatoes - Dad loves Cream of Tomato soup, Christopher loves Toasted cheese and Tomato sandwiches, Chloe likes Napolitana Sauce on pasta and my favorite is this salad:


Tomato Salad with Fresh Mint and Danish feta

Serves 4 people

500gr baby tomatoes (use different colors)

100gr Danish Feta
zest of 1 lemon
lemon juice to taste
extra virgin olive oil
chopped mint

Wash and halve tomatoes in salad bowl
Add all other ingredients and keep in fridge for 1/2 hour

Serve as a salad with grilled fish or steak.
Delicious as a starter on mini brucshetta's.

It is fantastic to get up early this morning and to realise that the tomatoe that I had been watching every now and then in your Herb garden had not been "liberated" by any of the children. I didn't know how to break the news when I saw it was gone... Fortunately I took a look on your blog and was glad to see that the toatoe had an honarary place on the "world...wide...woffle!! Your site is geting to what you wanted it to be and I was hopeing that you could give some lessons.

I have grown tomatoes this year for the first time. Mine are still green, but they are showing lots of promise. I have posted the pictures on my blog.
