I have such hectic days during the week with playing mom's taxi, cooking, errands for dad and church activities, that on Saturdays, unless otherwise planned, I like to just unwind a bit. Sometimes I unwind to such an extend, that I forget to cook.
I had some chicken in the fridge and felt like something "orangy" and sweet and so we got started.
Chicken for my honeys
6 chicken pieces
1/2 cup freshly squeezed orange juice
the zest of an orange
1/3 cup white wine
1/3 cup sweet wine
1 Tbs honey (I used orange blossom)
1Tbs whole grain mustard
1 teaspoon fennel (dry toasted first)
Salt and pepper
1 heaped Tbs corn flour.
Place chicken pieces in an oven proof dish.
Mix all other ingredients and pour over chicken.
Bake in oven for 1 hour.
I served mine with mashed potatoes and peas(Yes, processed, remember, I was taking it easy - no shopping!!!)
It was a lovely meal and went down well with the family.
Ps. Just so you know, hubby is getting so clued up, he says he could taste the hint of the rosemary without physically eating it (The garnishing). Ferran Adria once explained that we taste through what we smell and used the example of rosemary to proof his point.
