Spinach and Bacon Quiche




My son has a cricket match this afternoon and even though they only play 20 overs, it takes the whole afternoon. Cooking supper after all this, is just not going to happen, so I quickly made this quiche this morning. It is so simple. I have refined it to two steps, provided that you have the right ingredients.


Spinach and Bacon Quiche


















 The Crust
Place the following in processor:

250ml flour
250ml strong cheddar cheese, grated
125ml soft butter
1 tsp dry mustard

Process until it comes together in a ball of pastry - rest for 20min(if you can).
Press dough out into a quiche pan.

The filling

250gr bacon pieces - fried in some olive oil
200gr spinach - I use frozen spinach that is available at most supermarkets
200gr feta cheese - crumbled
250 gr cream cheese
4 eggs.
125ml grated parmesan cheese.

Mix all the ingredients for the filling together and pour in pastry case and bake for 30 min at 180 degrees.  I served mine with a simple salad - roasted butternut, red onions, feta, rocket and little plum tomatoes.

Quiche seems to have fallen out of favor over the years, but it can't be beat for a quick, light, yet substantial meal. I love the idea of sharp cheddar with mustard in your crust. Sounds really yummy!

Quiches are delicious and I never understood why they were maligned.

I have never really loved quiche, maybe because my mom doesn't make it with a crust. Yours looks wonderful though!

That quiche looks good and sounds really tasty. I have yet to try making a quiche but it is on my to try list.

jessy - You know I have seen blocks of ice-cold quiche on a platter, and that gave me the shivers too, but I promise this recipe is different.

This looks really tasty. Quiches are a rare treat for me--I've never thought to make one myself. I might spy one at a party and hungrily gobble a slice or two (or three). Sounds like something I should try at home now, too!
