Spice up your day..



This weekend the cold weather finally arrived. On Friday the children were still in the pool and yesterday morning winter was here in all it glory. For me it was quite a shock!!I love winter ....the climate, the clothes and the FOOD!!!!!, but I had to make a quick mind shift and start my winter repertoire in the kitchen. I got a whole bag full of butternut at the market the other day and my family loves butternut, so that was the obvious choice for celebrating the arrival of winter. I was in the kitchen the whole day, not because the soup takes that long, but my daughter, Chloe wanted to make the soup and that slowed down the process quite significantly.

It was a good thing though, because in the end, after the photo shoot, the soup was cold and my husband said that it could actually work as a cold soup. So for you guys, that are in spring mode,
give it a go....


















Spicy butternut soup

5 medium sized butternuts (When they are huge, I only use 1-2)
1 medium onion
1 heaped Tsp curry powder
2cm piece grated ginger
2 cloves garlic
1 peeled and grated apple
500ml chicken or vegetable stock
1 liter of milk
250 ml cream
125ml orange juice
zest of the orange
salt and pepper
grated nutmeg

Saute the onion, garlic, ginger and apple in some oil. Add curry powder.
When translucent, add butternut and stock.
Close lid and cook until butternut is soft.
Add milk and orange juice.
Puree the soup with a stick blender of in a food processor.
Pour back into pot and add all seasoning, such as salt, pepper,orange zest and nutmeg.
Stir in 200ml of the cream, keep the rest for decoration.
Please taste your soup and add, maybe a little lemon juice to tart it up, let your own tastebuds lead you.

For the curries prawns.

Peel and de-vein prawns, keep tails in tack.
Heat some olive oil in a pan with 1 level Tsp curry powder and about 2ml paprika.
Fry prawns until just cooked.
Season.

Assembling the dish
I made "cups" with phyllo pastry earlier in the day. I placed the prawns in the phyllo cups and place it in the middle of a plate of soup.
Drizzle with cream and some of the pan juices.
Finish off with fresh herbs.

oh man....you left the little antenna things on the prawns ~ and I love that, it's like biting into something wild n' free and too much fun!

As usual, your plating is beautiful....you must paint or an visual artist of sorts~with that said culinary artist!

wow this is fantastic presentation!! this is a really nice work of "eating with your eyes" (and i'm sure this must taste fabulous too). Presentation wise I love all the textures you used, the colours and the volumes...it's not all "flat" and boring! A really nice dish Nina!!
