A meal on a stick......what was to be a fun meal with the children turned out to be such a blast, that I am sitting here typing with greasy fingers...... My children asked if they could have chicken kebabs and I reluctantly said "yes", because chicken kebabs are always dry and overcooked. So, I started thinking of different marinades or basting sauces, but nothing really came to mind. It was only when I read a recipe for Salsa Verde on We are never full that something started happening in my mind. I also wanted the meat and the veggies on the same stick so the creating process started. Needless to say I had fun, the children had fun and the taste was everything that I envisaged.
Sticky Chicken Kebabs
500gr chicken breast fillets
2 cloves of garlic
a pinch of sugar
a few glugs of good balsamic vinegar
a few glugs of olive oil
salt and pepper
juice and zest of 1 lemon
Cut chicken into big chunks(not too small as it will dry out when grilling)
Add all other ingredients and marinade for 1 hour.
Alternate the chicken with baby tomatoes and chunks of courgettes on skewers( soak skewers in water for about 1 hour - it prevents them from burning)
Heat the griddle pan or BBQ and cook until done. Keep your eye on them, though.
But the chicken kebabs was just not enough, so I was thinking .....where's the carbo...... and how will I get it onto a skewer. It was then that I remembered that I saw this idea once in a magazine...
For the ciabatta kebabs
1 olive ciabatta, cut into bite size chunks
baby tomatoes
mozzarella cheese, cut into chunks
basil leaves
olive oil
salt and pepper
Toss the bread, tomatoes and cheese into a bowl and mix with about 1-2 Tbs olive oil and salt and pepper.
Alternate the "chunks" onto skewers and grill on a medium heat until bread is lightly toasted and cheese starts to melt.
I served both kebabs with a Salsa Verde. I used this recipe from We are never full, but added 1/2 a chili for some bite.
Ps. My children had theirs with tomato ketchup, but that was ok with me - salsa verde can wait until they are a bit older.

Both look great! I am loving the ciabatta kabobs. I make caprese kabobs quite a bit but for some reason, never thought to skewer bread on there too! Definitely doing that next time.
Wow! I'm sooooo impressed that you really were able to use this salsa verde in such a great way. I think I'm going to steal this idea as well!! elly - caprese salad is great, but this version is just a bit more filling and the children loved the gooey cheese.
we are never full - yeah, my daughter is definitely a chef in the making although she is only 7.

eliza - we now have to move to the indoor grill as autumn has finally arrived.
Both skewers are sound like they were a hit (adults & kids alike). For the chicken, thigh meat always stays tender or, you could add bacon into the mix of skewers for moisture too!
