Nevertheless, I decided to bake a cake for a change. Now this recipe is actually a chocolate cake recipe, but my mom has adapted it to work for both vanilla or chocolate options. I'll show you both options...
Passionfruit Layer Cake
Vanilla Sponge
Preheat oven to 180 C
2 x 250 ml cake flour + 4 Tbs cake flour (for the vanilla) For the chocolate cake, use 4 TBS cacao.
2 x 250 ml caster sugar
125 gr butter
1 x 250 ml boiling water
4 x-large eggs
4 tsp baking powder
1/2 tsp salt
For the chocolate cake, also add 1/2 tsp cinnamon, 1/4 tsp fine cloves, 1/2 tsp fine nutmeg.
For the filling
1 packet instant vanilla pudding
250 ml milk
500 ml cream
1 small tin passion fruit pulp
Sift together all dry ingredients.
Beat eggs and sugar until white and fluffy.
Melt butter and boiling water together. For the chocolate cake, add the cacao to this butter and water mixture.
Now fold the dry ingredients into the egg mixture and add butter mixture gradually. Work gently to keep all the air in.
Divide batter into the two pans and bake for 25-30 minutes. Test in the middle of the cake to see if ready before you take the cake out the oven.
Remove the cakes from the tins and cool on a cooling rack.
Now make the filling.
1 packet instant vanilla pudding - ignore the instructions and just make it with 250 ml milk, leave in fridge to set. For chocolate cake, use chocolate flavor.
Whip 500 ml cream until stiff and add the vanilla pudding and beat some more until mixed. Gently fold in a small tin of passion fruit pulp.
When the cake has completely cooled down, split each cake in half so that you have 4 layers. I use a thread, but if you can cut straight it is fine.
Now layer the cake with the filling in between and there you have it - a passion fruit layered cake!!!
Here is a few pointers.
1. This cake has to stay in the fridge, if it is not finished in one sitting.
2. For a lighter cake, you can replace half the flour with cornflour.
3. If for some reason, you want a lemon cake, add lemon zest to your dry ingredients and replace half the water with orange juice.

My favorite part about this cake is that the sides aren't frosted! Cakes always have too much frosting for me (I know - I'm a nutcase).

I wish i could find passion fruit pulp. I would be to passion fruit what Ben at What's for Dinner is to Mangoes. I'm affectionately calling him Mango Man - imagine I could be Passion Woman - it does have a kind of a nice ring to it doesn't it.
The cake looks fabulous - and what do you mean if it's not finished in one sitting. We're hearty cake finishers around here - people would be saying "is there any more"

Oh what a gorgeous cake! And I recognise those flowers too - I had a pot of them growing on my townhouse balcony back in PE because I loved their smell so - their name has something to do with the sun as I recall. Awww, homesick now!
