Making Pastry is Child's Play!


Most people,except you cooking freaks out there, steer away from making their own pastry. The whole idea of chilling butter and rolling and folding and more rolling..... scares them immensely. They will either buy puff or shortcrust pastry and although there are good brands out there, I have seen really bad ones too. I am sharing a recipe with you today that has been in our family for decades and apart from being so easy to make, it is also extremely versatile for both sweet and savory recipes.
My daughter, at age 7, made this yesterday and if she can, so can you! Make some today and let your creativity loose. It will last up to a week in the fridge and up to a month in the freezer.

Easy pastry
500gr butter, cubed
550gr plain flour
1 tsp Cream of Tartar
1 cup boiling water.
pinch of salt

Mix flour, salt and Cream of Tartar.
Put butter in a separate bowl, add boiling water and let butter melt completely.
Add butter mixture to flour mixture and mix well, without over mixing.
Pour out on a plate and leave fridge overnight.

When needed, roll out on a floured surface and then use as indicated on your own recipe.

Today I made Old Fashioned Jam Tarts( Oh, I missed my gran....)
Roll out pastry until about 2mm thick. Use cookie cutter and cut circles. Place a dot of your favorite jam in the middle and fold over. Smear egg white around the edges to prevent the jam from running out. You can also roll the jam in flour before placing it onto the pastry. Brush some egg wash over the top of the tarts and bake at 200 C for 15 minutes or until brown and puffed up.

The only reason I don't make pastry more regularly is so I can pretend not to know the sickening amounts of butter that go into it ;-)

Nina, i have always wanted to make pastry. I used to live in the US, where ready sheets were available, now I am in India, where I dont get them. I had a question, after i fridge the dough overnight, How can i make sheets of them? do I make balls and roll them into sheets and place one over the other to get a flaky pastry? I am confused. Looking forward to your reply. Thanks

I agree - make more pastry! Although having said that, I'm a shortcurst pastry kind of girl, sweet or savourty. As for puff pastry, that's why Ready-Dough was invented, for wusses like me :) Tarts look amazing - I also used to make these as a kid.
