Blue Cheese Quiche for a quick supper

A Quiche is such a versatile meal, for in summer you can serve it at room temperature with a delicious salad and in winter piping hot with steamed veggies. The possibilities for fillings are also endless...... you can create your own unique quiche that will satisfy your family's taste buds or search the net for a flavor that you fancy...



We were watching Masterchef the other night and one of the contestants made a Blue Cheese quiche as a starter and hubby commented from the side: "I wouldn't mind getting that for supper!" I wanted to snap and ask: "What the heck does this mean????" Do you not like my suppers anymore?". For the sake of World Peace, I kept quite and last night I thought...why not. It is a good idea. We love Blue Cheese and we love quiches! As a base I always use cream cheese, sour cream and eggs so I used my tried and tested recipe again but added the interesting bits...


Blue Cheese Quiche
Ingredients

1 roll Shortcrust pastry
250ml sour cream
200gr cream cheese
5 eggs
100gr Blue Cheese
1 large spring onion chopped
1 red onion - chopped and caramelized in a little oil.
Salt and pepper to taste - bearing in mind that the blue cheese is very salty.

Roll out pastry and blind bake for 15 minutes.

Make the filling

Beat eggs and add sour cream and cream cheese.
Crumble the Blue Cheese into the mixture and mix well.
When the pastry case comes out the oven, pour the egg mixture in the base. Sprinkle with spring onions and caramelized onion.
Bake for 20-25 minutes at 180C.

Serve with a salad or a cup of soup when the weather is colder.

Ps I will NEVER use store bought pastry again.....It spoiled the quiche for me, but dad and the children loved it....

There are plenty of earthworms and one lady buried the peels of a sweet potato and look what she took out of her garden. A sweet potato weighing in at 4.1lbs. Amazing. I love chives, even more than scallions and quiches are versatile, as you say. They can be served all year 'round.

That quiche looks really delicious. Could we substitute different cheese for the blue cheese for those wusses (me and my partner) who don't like blue cheese, or would it ruin the taste/texture?
