Pesto Pasta , per favore!!!!



PhotobucketCan there ever be enough pasta recipes? Definitely not, especially if they are super fast and so delicious that you can simply not get enough. So, do yourself a favor and add this recipe to all you other favorite pasta recipes, it will soon be a "regular" on your table.

This recipe takes as long as it takes for the pasta to cook - about 12 minutes, so are you ready....



Pesto Pasta
Step 1 - Place a big pot of water with salt on the stove and bring to the boil(add salt at end, it will cook even faster!)

Step 2 - Make pesto - Place the following ingredients in a blender:

4 cups fresh basil
2 cloves of garlic
zest and juice of a lemon
1/2 cup flaked almonds
1/2 cup grated parmesan cheese
While machine is running add about 1/2 to 3/4 cup olive oil. Season to taste

Step 3 - Add pasta of your choice to boiling water and cook until "al dente". When cooked, drain off all water.

Step 4 -Add about 10 asparagus, cut up in small (15mm) pieces. The heat of the pasta will "cook" the asparagus.

Step 5 - Add about 3/4 cup of the pesto to the pasta and mix.

Step 6 - Enjoy with more parmesan cheese and toasted almonds(make the almonds while the pasta is cooking)

I love pasta and pesto! Can't go wrong with that. Actually I think most dishes can be improved by pesto :-)
