Puff pastry bites with tomato, cheese and Pesto!

Making snacks does not have to be difficult as so many people seem to think. There are a few staple ingredients that I recommend you keep in your fridge or freezer. They always come in handy, are never waisted and you will look like a pro in the kitchen..
I had people over for Bible study last night and wanted to make something really delicious, but was pressed for time. So, out came the roll of puff pastry from the freezer, a tub of feta cheese and tomatoes from the fridge, thyme from the garden and voila.......this is what I made.


Puff Pastry Bites

Ingredients

1 roll puff pastry, thawed
1 punnet cocktail tomatoes, halved
2 wheels of feta
thyme
1 egg, beaten

1. Lay out the pastry on a flat surface. No need to roll out any more.
2.With a sharp knife, cut out rectangles - about 4x6cm
3.Place half a tomato(cut side down), a tiny block of feta and a sprig of thyme on top of the pastry. Repeat with all the other rectangles.
4.Brush the pastry with egg wash and bake for 10-15 minutes at 200 C.
5. Serve with little dollops of pesto and a few sprigs of fresh thyme.

These are beautiful. The topping looks almost like a strawberry. You have such a great eye. I'm looking forward to hopping over here and seeing light, bright summery things while we gear up for winter in the northern hemisphere.

I made these some time ago, one Friday eve for friends together with the usual snacks and they were very impressed! It super easy and quick considering that I hate making anything on a Friday eve after work...
