When beef and mutton were on every menu for the entire holiday, it is difficult for me to wean off meat so easily. I also do not think that red meat in moderation is so bad for you, so I had to find a midway. AH!! Why not cook 1 steak instead of 4 and we all share this in the form of a salad. Clever huh!!!
I was not happy though, the salad idea was just too bland.......it needed a ....special dressing and after searching for a bit, I found it.....a Blue cheese dressing.
I found this recipe on a blog called Wasabibratwurst.
Beef Salad
Ingredients( this is what I used, feel free to use what you have available)
1 pillow bag of greens
1 handful of snap peas
1 small punnet cocktail tomatoes - halved
about 8 baby potatoes - cooked and halved
1-2 avos
1 rib-eye steak, marinaded and grilled to your liking. ( I use lemon juice and zest, olive oil and thyme for my marinade)
Blue Cheese Salad Dressing Recipe
1 ½ cups blue cheese, crumbled
1 garlic clove, minced fine½ cup buttermilk*
⅓ cup good quality mayonnaise
2 tablespoon white wine vinegar
½ teaspoon sugar
½ teaspoon kosher salt
½ teaspoon fresh ground pepper
1. Mash the blue cheese, garlic and buttermilk with a fork until the blue cheese is well distributed. You can make this in a blender if you wish to have a smoother dressing.
2. Add the rest of the ingredients and mix well.
3.This dressing should be covered, and rested in the refrigerator for a couple hours, preferably 12 hours before serving.
Make the salad by tossing everything together and just before serving, carve the steak and top the salad with strips of this delicious, tender beef. Serve the dressing on the side.

Sharing a steak is a really good idea - we often do this at home. As well as eating less it means you can afford to buy really good steak

I do love beef in a green salad, and blue cheese dressing has been my favorite since I was a kid. Now I have to go quite light on the dressing!
