
For today's culinary tour we are off to Portugal!!!
We have a bakery in the area that is renowned for their confectionery and take away meals. People in Cape Town should all know the Coimbra in Claremont ( If you don't, make a plan to get there!!!)
I popped in recently to have a cup of coffee, when out of the bakery came this heavenly smell of vanilla and lemon. Soon to follow was a tray full of these delicious-looking, icing-sugar dusted cakes. The baker told me that they are called Bolo de Arroz of loosely translated: "Portuguese Rice muffins." Of course I had to buy a couple and on my way back home, I could see visions of Bolo de Arroz with homemade lemon curd and strong black coffee.

The cake was yellow and reminded me of a corn muffin yet the taste was far superior and "cakier". It had hints of vanilla and lemon and tasted utterly sublime with this lemon curd. I was unsuccessful in finding a recipe for Bolo de Arroz, so if anyone can help, I will be most grateful.
I wanted an easy yet rich lemon curd recipe and I found just that on House of Annie. I like the recipe, because it is super easy and requires no " beating over a pot of simmering water". The curd is made on the stove top on a very low setting and the result is creamy and smooth..just the way I envisaged it.

This recipe reminds me that spring is coming.
These sound great. My somewhat hesitant bet is that you could approximate these by making your favorite yellow sponge cake and subbing a bit of rice flour for plain flour and adding some lemon zest. That's just based on your description of the texture. I can imagine that the lemon curd was lovely with them:)

Bolo de Arroz with lemon curd must be belicious.

As I promissed, here is the translation of two recipes of Bolo de Arroz. I’m not shure wich one is the best, i would trust on the second one, but adding the zest of the lemon.

Ingredients:
100 g margarine
250 g sugar
1 dessert spoon of baking powder
Zest of 1 lemon
4 eggs
150 ml of milk
300 g of wheat flour
60 g of rice flour
margarine and sugar
How to make:
Beat the margarine with the sugar. Add the lemon zest and eggs, one by one. Add milk, the flours, and the baking powder. Let rest 30 min. Pre-heat the oven to 180 ยบ C, grease little moulds and lining them with a layer of paper. Put the mass in each of them, sprinkled with sugar and bake for a light to 30 min.

Ingredients:
8 units.
125 g of sugar + the necessary to powder the cakes
70 g of margarine
3 eggs
150 g of rice flour
50 g flour
1 dessert spoon of baking powder
Preparation:
Turn on the oven and set it to 180 ° C.
Cut 8 strips of paper plant closed with 30 x 5 cm. Fold the strips in half, wrap and staples the ends to obtain some cylinders with 5 cm high.
Beat the sugar with the margarine to a smooth and creamy whitish. Add eggs, one at a time when beating. Add the rice flour, the flour and baking powder and stir well.
Lining a tray in the oven with vegetable wax paper, place the cylinder on top of paper. Distribute the weight of the inner cylinder of paper with the help of a spoon and bring bake for about 30 minutes. About 10 minutes before the end of, powder the cakes with sugar.
That rice muffin looks nice and moist and tender and good!
