Thai Crab Curry

Thailand has always been a destination that I would love to visit some day. Being a foodie, it is however not to explore the many sights in Thailand like the Phra Trimurti Shrine (The God of Love) @ Central World (Bangkok), the many beaches and holiday resorts or any of the beautiful temples, but my driving force is without a doubt the food!
I love Thai food and the curries are just so full of flavor and interesting aromas that it is hard to resist. I am sure I will one day end up in Thailand, but for now all I can do is to take my family on culinary trips to these exotic destinations.
 


..and that was exactly what I thought when I saw some crab at the local fish monger...let's make a Thai Crab Curry for supper! I added some sword fish just for body and made just a basic Red curry. So here goes:


Thai Crab Curry
Ingredients

  • A 3cm piece of ginger, grated
  • 3 cloves chopped garlic
  • 2 chopped chillies
  • 1 T ground coriander
  • Zest from a lime
  • White parts from 1 stalk lemongrass, chopped fine
  • 1 tbsp red curry paste
  • 2 cups coconut milk
  • 2 T fish sauce (optional)
  • 1 big onion chopped
  • fresh coriander
  • 1 tbsp Canola oil
  • 1 kg crab meat - with shells
  • 3 swordfish "steaks" - cubed

Heat oil in a wok and and add the onion, garlic, dry coriander, lemongrass, lime zest and ginger. Sweat the onions until they are translucent and add the curry paste. Add the coconut milk and cook for about 1-2 minutes. Add the fish and crab and cook until fish is cooked and crab has changed to red/pink. Add the fish sauce and adjust to your palate. I thickened my sauce slightly with about 1 tbsp cornflour mixed with a little water. Stir into the curry and cook through. Serve this delicious curry on fluffy Basmati rice and top with fresh coriander and another chopped chilli.

I am a huge fan of Thai food too. We were fortunate to travel to Thailand a few years back and got to take some cooking classes. That was great!

All of your dishes look amazing Nina, but this looks especially tempting. On a different note..if you want your lasangna to be a nice shape for the photo wait till it is cold, or at least room temperature, then slice it up.

huuuge fan of thai food over here, but a shame i dont give it a try that often in the kitchen (usually eat it when im out at restaurants) would love to make something as beautiful and delicious looking as you!!
