Mushrooms and Blue Cheese on Ciabatta - perfect for a back-to-school lunch!!!

Light lunches or a mid-day( at 2 o'clock when school comes out) snack is always a problem for me, because we have our dinner at night, so it can't be too heavy, but the children do want something a little more substantial. Well today they were in luck! I had some mushrooms and blue cheese and in no time I had these delicious open sandwiches ready!

Mushroom and Blue Cheese on Toasted Ciabatta

Ingredients - for about 4 open sandwiches

250g mushrooms - sliced
1 tbsp olive oil
1 clove of garlic - crushed
125ml cream
blue cheese - use as mush as you like - I used about 50gr
crushed black pepper
salt

Heat the olive oil in a pan and add the mushrooms and the garlic. Sautee until it browns slightly. Add the cream and reduce a bit. Crumble the cheese in the sauce and allow it to melt. Season with salt and lots of black pepper. Serve with baby gem lettuce on thick slices of toasted ciabatta.

Haven't been visiting my friends lately, been a bit busy getting Markwin ready to go back to school. He is loving his school. He has battled getting used to not ruling the roost like home, but now is in a smaller room with just one other boy (who is older) and hopefully will be more comfortable in his space.

Wow... I wish my afternoon snacks looked like that! I always thought that I was spoiled because my mom cut up fresh fruit and crudités with us... now I'm not so sure... I think your kids may be even more spoiled than I was! That looks and sounds awesome.

Those look amazing! Not only good for back to school! This would be delicious for any day of the week or year, as I just love blue cheese and any kind of mushroom. In fact; I might be making this real soon!
