
Ground Beef or minced Beef as we call it here, must be the most sold form of beef there is! It is relatively cheap and a little goes a long way. Needless to say it is on our menu at least once a week!
The possibilities for ground beef recipes are endless and it is ideal for those quick week night meals.
Spaghetti and meatballs have always been on our menu, even when we were kids, my mom used to bottle it in glass jars for our caravan holidays by the sea. My favorite movie as a child was "The Lady and the Tramp", not because of the cute puppies, but because of the spaghetti and meatball scene between lady and her tramp!!
I do not have fancy tricks when making meatballs,but I have a few tricks that work for me and I am sure it will work for you too!! I share them with you gladly!
Spaghetti and meatballs
Ingredients
1 kg ground beef - topside if possible
1 large onion - grated
4 slices of brown bread - not seedloaf
1 tbsp Worcester Sauce
2 tsp salt
125ml chopped parsley
1/2 tsp ground coriander
pepper
Soak bread in water for about 2 minutes. Squeeze the bread to remove all the water and add, with all other ingredients to the ground beef. Mix with the hands, but do not over-mix. Make small meatballs and brown them in a skillet with some olive oil. Keep aside
Tomat0 sauce
2 x 410gr chopped tomatoes
1 small tin tomato paste
1 large onion - chopped
olive oil
2 cloves of garlic - crushed
1-2 cups of water
salt and pepper to taste
zest and juice of a lemon
sugar - we like the sauce to be a little sweet.
125 ml chopped parsley
Heat oil in a big pot, add onion and garlic and fry until slightly browned. Add all the other ingredients except the parsley. Cook the sauce for 10 minutes. Place the browned meatballs into the sauce, place the lid on the pot and let the meatballs simmer for another 20-30 minutes. Add the parsley and serve on cooked noodles! My husband likes it if I mix the meatballs and sauce with the pasta, but it does not make a pretty picture so do as you please!!! Serve with lots of grated parmesan!!!!

This looks lovely Nina! I too love spaghetti and minced meat and there are soooo many varieties to make this appetizing! We usually also mix it in with the sauce, but I totally agree that the balls are much more photogenic!
