
Meatloaf is not at all something that I grew up with, yet it is a fixture on so many menus. Meatloaves have always fascinated me, because in essence it really is a "huge meatball" isn't it? So, when my friend, Juno,over at Scrumptious Blog - What's for supper? Recipes from the coal face. posted these Mini Meatloaves, I knew that I found the meatloaf of all meatloaves......and I was right!!!
You can use any ground meat, lamb, yes, even pork, I suppose, but ground beef is on our menu once a week, so I decided to just use that. Wow, I thought it was unbelievable!!!! The spice mix was just perfect!!! Please give this a try!!
I served this with thick chunks of pumpkin baked in the oven with pecan nuts and honey and some brussel sprouts. These recipes I will share with you in the next few posts.!!Enjoy!

What darling little meatloafs. I would be very pleased to have these served to me. I grew up with meatloaf.
When I met my husband, one of the first things he told me was, "I don't like meatloaf." I wondered what kind of person was this who doesn't like meatloaf? But I'd never eaten any other than my mothers, which was excellent. There are many bad meatloafs served in restaurants and they give this wonderful comfort food a bad name.
P.S. He loves my meatloaf and I know he would love yours also.

I didn't grow up with meatloaf either, and I'm still not a huge fan but I would have to love these with the bacon! They are so much prettier and tastier than regular meatloaf.
This is a great looking version of meatloaf which I will come back to and take a better look.
