Green Beans prepared MY WAY - I could have this everyday!!!

Growing Green Beans is the easiest thing to do!!!Remember your early childhood days when leaving a bean under some wet cotton wool so that you could witness the germinating process. I was always so fascinated as a child!!
These days I am amazed at how fast the green beans grow in my garden...literally from planting to harvesting is but a few weeks. If you want your children to become involved in your garden, let them plant some beans......they get totally hooked !!!




I have found my favorite way of eating fresh beans, I think!!! ( one can never close the door on new possibilities, can you??) I would be more than happy to have these green beans as a main meal a couple of nights in a row.. If you insist on having another protein, this recipe will go well with grilled tuna, steak chicken......






Green Beans with toasted sesame seeds, Parmesan and onions..

Ingredients

Fresh green beans - top ends removed
toasted sesame seeds 
grated Parmesan
black pepper/salt
lemon infused olive oil


Get a pot of water boiling and add the beans. Blanche for about 3-5 minutes. Your beans must be cooked but still remain crispy. Remove beans from the pot and plunge in ice-water to stop the cooking process. When cooled down, place the beans in a bowl and add a good amount of cheese, pepper, salt and olive oil and toss well. Arrange the beans on a serving plate, sprinkle with the sesame seeds and more cheese and top with the deep-fried onion rings. I dare you to try this....... a quick vegetarian meal for the busy season!!!

P.S. Green beans are awful when they are overcooked. I can understand why someone would not like them if that's the only way they've eaten them.

I love Green Beans but I cannot always get my family to share my enthusiasm. However, with this recipe everybody seemed to enjoy them. One of my kids even asked for seconds (unheard of)! The Green Beans remained crunchy and the deep-fried onions just added to the flavor. One of my favorite entrees is Salmon Ballotin with Fennel (found on Gourmandia.com) and these green beans are a perfect accompaniment. After marinating is complete the Salmon Ballotin takes less than an hour to prepare and it is so tasty (and yes, healthy).
