No longer is peanut butter something you eat only on bread, I have have used it in my Crunchy Noodle Salad, Peanut Butter and Choc Chip Cookies and also with great success in a Satay Salad! I have to admit that my family loves it best in sweet dishes like ......
these Holycraptheseareamazing Cookies which were absolutely delicious,by the way! These dead Easy Chocolate Cupcakes with Peanut butter Frosting were quite a hit too, not only with the family, but I found the peanut butter frosting so creamy and moreish that I had to use all will power not to eat it in the same way I sometimes eat peanut butter - spoonfuls straight from the jar! As for the Easy Chocolate Cupcakes - it is my old trusted recipe that uses only store cupboard ingredients, but a recipe that I have often tweaked to change them into Espresso or Caramel flavor. This time however I stuck to the original recipe for the cupcakes, but the frosting was a new recipe that I got from All Recipes.
Chocolate Cupcakes
Yields 24
Ingredients
3 cups flour
2 cups sugar
3 heaped tbsp good quality cocoa
1 tsp bicarbonate of soda
4 tsp baking powder
a pinch of salt
2 cups boiling water
1 cup cooking oil
1/3 cup white vinegar
1 tsp vanilla extract
Preheat oven to 180 C. Place cupcake wrappers in 12 muffin pans. Mix all the dry ingredients in a bowl. Mix the wet ingredients in a glass jug and add the the dry ingredients. Mix and spoon into the cupcake wrappers. Bake for 20 minutes.
Peanut Butter Frosting
Ingredients
½ cup butter, softened
1 cup peanut butter
3 tbsp milk, or as needed
2 cups confectioners' or icing sugar
Beat butter and peanut butter in an electric mixer. Slowly mix in the sugar, and when it thickens and gets dry, add the milk a little at a time until all of the sugar is mixed in and the frosting is thick and spreadable. Beat for at least 3 minutes for it to get good and fluffy.Spread or pip lavishly over the cupcakes. Sprinkle with crushed peanuts!
Peanut Butter is a very good source of Protein, especially on Meatless Monday, which makes these heavenly cupcakes good for you, or not?

I dunno, I think peanut butter and chocolate far surpasses peanut butter and jelly.
do you know that i made choco muffins with the vinegar in them and was blown away at how good they tasted. have yet to do this with cupcakes.

froupe - I am sorry you had a mishap. I think if I read correctly you had it on F and not on Celsius. In my oven 20 min at 180 is perfect.I do however say in the recipe you have to use cupcake wrappers, because there is no egg in the batter it is very crumbly when warm and cannot be taken out a pan, hence the wrapper. I am sorry you had this mishap!
