Low GI Mexican Fish Cakes with Avocado Salsa

"Eat Low GI! Don't believe any other weight losing myths, just eat Low GI!" This advice did not come from a dietitian or a doctor, but from my mom who is the woman behind my dad's most successful weight loss stunt.
Early in January this year, my father went to the doctor after not feeling so well and to his(and my mom's) horror, the doctor's diagnoses was that his sugar is way too high and that he has to drink who knows how many tablets. Well anybody who knows my parents, will know that they do not take life's challenges lying down....
My mother immediately took up "surfing" and devoured every recipe and bit of advise Google had on offer and my dad prepared himself for the worst, because he has been married to my mom for almost 60 years and he knows that if she grabs an idea, nothing will stop her from reaching her goal. The goal? Proving the doctor wrong! They would not rest until the doctor reversed his "judgement"!Certainly not an easy goal if you are used to cooking with sugar and butter and if removing fat from meat prior to cooking  is just about a criminal offense.However, where there is a will, there is a way and six months down the line, dad is looking  lean and mean and mom is a devoted Low GI advocate. According to her, the only adjustments they made were:


  • to adjust her recipes to make it Low GI, in other words replace stuff like sour cream with Bulgarian Yogurt, change white flour to whole wheat etc
  • adjust portion sizes somewhat
  • avoid snacking in between
With these Low GI Mexican Fish Cakes, I tried to fulfill at least two of the above mentioned tips. For those of you who thought low-fat and low GI has to be bland and  tasteless, think again. These fish cakes were so darn tasty that it was hard to stick to the second bit of advice of controlling my portion size.I served the fish cakes with an avocado salsa and some oh-so-good hot chips from my Phillips Air Fryer(also quilt-free)



Low GI Mexican Fish Cakes with Avocado Salsa
serves 4


For the fish Cakes
Ingredients

 425gr tuna packed in brine

410gr tinned butter beans – rinsed and mashed

100gr dry oats

2 jumbo eggs

2 spring onions – chopped

2 cloves garlic  chopped
1 teaspoon fine dry coriander
1 teaspoon dry cumin

1 small red chili- chopped

1 handful fresh coriander – chopped

Salt/pepper

Spray ‘n Cook or a little vegetable oil for frying



Drain the tuna and place in a bowl. Add all the other ingredients and mix through with a fork. Shape into 6 patties and fry in a pan until golden brown. Serve with the following salsa




Avocado Salsa



Ingredients

1 small red pepper

1 small green pepper

1 small yellow pepper

1 ripe avocado

1 red onion

1 small chili

1 handful of fresh coriander

2 tbsp red wine vinegar

1 tsp sugar

Salt/pepper



Chop all the fresh ingredients and mix together in a bowl.  Serve together with a dollop of sour cream on the Low GI Mexican Fish Cakes.

I'm a big advocate of the low GI lifestyle. It is the only way I have ever lost a significant amount of weight and kept it off. And, regular moderate exercise can help to lower blood sugar levels as well.

The fish cakes look delish!

I have to confess that I heard about low GI but I've never seriously looked into it. But these fishcakes look good enough to give it a try!

Kudos to your Mom! Your fish cakes look great and I am very intrigued by the air fryer - Colleen got me hooked on the idea when she posted about it a while back.

thanks for the recipe my husband and i have started following the low gi diet and are loosing weight feeling great but most of all i have fallen in love with food agin its so tasty.who doesn't like eating good food and loosing weight
