Whole wheat bread with smoked trout and lemony mayonnaise

Whole wheat bread has to be really good or else I’m prefer pillow-soft white bread! If I’m going to eat healthy whole wheat bread it must be full of goodness, moist, lots of nuts, fruit and it must have a crusty outside!

Whole wheat bread baked with buttermilk and bicarbonate of soda is good, but to me it is always a tad dry and has a bit of an after taste, so up until now, I have not had much success! No longer, I found the recipe! It takes literally 30 minutes to make and proof and then 45 minutes to bake! One dirty mixing bowl and 1 dirty pan, that’s it! How awesome is that!

To bring more whole grain and wheat products into your diets is a good thing on so many levels, not only does it stabilize sugar levels. but it reduces your risk of heart diseases, strokes, cancer and diabetes. I’m no doctor so if you want to read more about this, please click on this link! What I CAN tell you is that whole wheat bread or pasta tastes better than the white refines counterparts. It definitely gives me more energy and  I eat less when I eat whole grain products! This Moroccan Barley and Roasted Vegetable Salad is a meal all on its own and no meat is needed to fill a hungry tummy! Pack a few of these Oats Cookies in the children’s lunch boxes and they will soon ask for more! Then of course go over the top with this whole wheat and Asparagus risotto and a big fat goose or duck egg and I’ll see you in heaven!

Anyway, back to the whole wheat bread recipe! Tomorrow morning I will be doing an outside broadcast with RSG and many other leading radio stations. I have invited chef Abbas Abrahams , who is the Executive Chef at the Crystal Towers to come and show us how to bake his delicious whole wheat bread! He was quite eager to part with his  recipe and I can truly say, it is the best whole wheat bread I have ever baked! I know you will like it too!

Let me not keep you in suspense, here then is Chef Abbas’ Whole Wheat Bread

Whole Wheat Bread

makes 4 medium loaves

Ingredients

1,25 kg Nutty Wheat flour

15 ml salt

45 ml  brown sugar

90 ml wheat germ

70 ml sesame seeds

70 ml linseeds

70 ml poppy seeds

70 ml crushed wheat

250 ml seedless raisins

125 ml nuts of your choice – I used almonds, sunflowers seeds

10 g dry instant yeast

1,25 l lukewarm water

Method

Prepare 4 medium sized bread pans by spraying them with Spray ‘n Cook. Mix all the dry ingredients in a big mixing bowl. Add the water to the dry ingredients and mix well. Spoon into the bread tins and use a pastry brush and brush the dough with olive oil. Sprinkle  some seeds of your choice over the top. Allow to stand for a 30 minute proof. Preheat the oven to 180 C. Bake the breads for 45-50 minutes or until  a skewer comes out clean when inserted into the bread.

Serve with real farm butter and jam or this delicious smoked trout and lemon mayonnaise!

Lemon Mayonnaise

2 egg yolks

15 ml lemon juice

zest of 1 lemon

5 ml white vinegar

5 ml Dijon mustard

375 ml canola oil

salt and pepper

15 ml fresh dill – chopped

Method

In the tall glass of the stick blender, place the egg yolks, the lemon juice, vinegar and the mustard. Lastly add the  oil. Place the blender right to the bottom of the glass, over the egg yolks. Start the machine and as the mixture starts the emulsify, slowly pull pull up the blender to see the magic happen right in front of your eyes. Add the salt, pepper and dill and enjoy.

    Shouldn’t sugar, salt, nuts and seeds be measured in grams?

      I think either can work, as long as you stick to one measuring tool
