Gluten-free waffles and Flapjacks – no kidding!

Gluten-free baking scares the heck out of me, seriously!

Gluten-free to me also means taste free, or at least to me! Wrong, I was really, really so wrong about this! The thing is, I don’t have to bake or cook with gluten-free products only, because we do not have health issues! The reality however is, that there are many people with intolerance and allergies to gluten! More and more emails in my inbox confirm this – people need help with easy recipes, that is still affordable and do-able!


I am no expert and I think most people who have gluten intolerance have been to a doctor and a dietician so they know exactly what to avoid and what causes them to have such discomfort. If you need more advise on this issue, do read this article!

Gluten-free

The question that is posed to me often is: What cán I eat? Please Nina, we need gluten-free recipes! The most complete list of what you can eat I could find, is this one! Well, right here on My Easy Cooking, you will find many gluten-free recipes. Mealies are my favorite vegetable and guess what… it is gluten-free! So give these Low-Carb Beef Tamales a go, you will love it! How about these crunchy Onion rings without the gluten quilt? Even those with a sweet tooth does not have to feel deprived. This meringue Torte is just what the doctor ordered! Yes, and you can have your gluten-free Chocolate Cake too!

The problem is that many of the gluten-free products are expensive and not always available in the smaller “dorpies!” So, when I saw this easy two-ingredient recipe for crumpets or flapjacks, I just had to give it a go! Once I made the flapjacks, I thought….. hang on, let me try the same recipe with waffles! Wow, even better results. Two ingredients, really! YES, REALLY!

Gluten-free

Gluten-free Waffles and Flapjacks

makes 2 waffles or 6 flapjacks

Ingredients

2 bananas

2 eggs

a little knob of butter

Method

Peel the bananas and with a fork in a bowl, mush them up completely. Add the eggs and mix. Heat th butter in a pan and when the butter has melted add spoonfuls of the mixture to the pan and fry until golden brown on both sides. When making waffles, simply heat the waffle iron and spray with non-stick spray. Pour the “batter into the waffle iron and bake until golden brown.

Serve with

– berries, honey and mascarpone

– cream and maple syrup

– bacon and maple syrup

– ice-cream and cinnamon sugar

    Hello Nina
    Ek is baie opgewonde oor hierdie wafel-/plaatkoekieresep. Dit is heerlik, maar ek sukkel ‘n bietjie. Die beslag is bietjie dun en dan sukkel ek om dit as ‘n eenheid om te draai.

    Het sommer dadelik die glutenvrye plaatkoekies gebak. Ek het gekapte almonds by die beslag gegooi. Dit was heeeerlik!! thanks for sharing!

    PERFEK, Nina – het sommer vanoggend nadat ek RSG geluister het, gou hierdie gebruik en plaatkoekies aanmekaar geslaan net om te sien hoe dit werk. Gaan nou definitief die resep vir my Niggie gee met die “glutenvrye” kind!
