Baked Eggs

Baked Eggs is your answer to feeding a crowd for breakfast. A little prepping with a wow result. That’s my kind of cooking!

Baked Eggs with a variety of toppings, crispy toast and a cup of god coffee, that is how simple breakfast can be. I used  to cater for big crowds and the last minutes before an order goes out, are always crazy, no matter how well you have planned. Recently I did a breakfast for 50 ladies and decided on the crazy idea of poaching 50 eggs.

Now listen, few things can surpass the luxury of a poached egg with hollandaise, but poaching them all to perfection, was really daunting. So the idea of Baked Eggs progressed from there.

Baked Eggs

Now, if you are a regular here in my kitchen, you will know that I have a thing for duck or goose eggs. Goose Eggs are seasonal like asparagus and strawberries, making them rare and sought after. Duck Eggs are silky and rich which makes them perfect for baking. So when Le Motte send us a media drop to dream about, there were 6 beautiful white duck eggs in the basket. I immediately decided to make Baked Eggs, but with duck eggs this time. The toppings can be anything, I opted for smoked trout and biltong with truffle oil. Absolutely no effort, but it was so delicious. So next time when you need to host a ladies breakfast or the extended family arrive for breakfast, go for Baked Eggs, you will not be sorry!
