Dunkin’ Chicken Burgers – The best crumbed burger ever!

Dunkin’ Chicken burgers……. what the heck next?

The idea of dunkin’ chicken burgers came to me during a four hour trip back from Prince Albert where I presented a cooking class in August this year. Our last class for the weekend was a Sunday Brunch class, but you know how it is when you’re doing all the talking. You do very little eating, which is a good thing right? Well, when I hit Worcester round about noon, I was starving and pull into the Colonel’s Drive through. Please notice that it the end of the month, a day after pay day, so everybody and I mean everybody is eating KFC.

Having had too many pieces of chicken that was a little too pink around the bone, I decided on a burger. By the time my food arrived, I was ready to eat anything, yes even this chicken (drops head in shame). Well, I looked down on my meal and all of a sudden, the chicken did not smell like chicken, the slaw was not good, the chips awful…….

I think I was the only one in the shop that thought that, but at that very define moment, I decided “fast food” is not good. For me at least! What I did see on the menu, however were their Dunkin’ Wings which I ordered on another occasion.

To cut a long story short, all the way from Worcester to Cape Town, I thought how I could replicate those sticky wings in my kitchen. The idea then dawned on me! A Dunkin’ Chicken Burger.

Right for my burgers I first had to make the Crumbed Chicken burgers. This is my go-to recipe and the kids love it, well that was until they tried my dunkin’ chicken burgers that is!

Dunkin’ Chicken Burgers

serves 4

Ingredients

8 unbaked crumbed chicken pieces ( look at the above recipe, use 1 chicken fillet per person, but cut them in half so that each person has 2 thin pieces)

lettuce

250 g cream cheese

4 pineapple rings – fresh or canned

4 sesame buns

For the Dunkin’ sauce

125 ml white vinegar

80 ml sugar

30 ml soy sauce

2 cloves garlic – grated

10 cm piece ginger – grated

30 ml sesame seeds

Method

Preheat oven to 180 C. Follow the link above to make the crumbed chicken fillets. Now place the chicken on a lined baking sheet. Place all the sauce ingredients in a small pot and bring to the boil. Boil for 1 min. Pour the sauce over the chicken and bake the chicken until it is golden brown and utterly delicious. Assemble the burgers as per the images.
