Quick microwave breakfast – egg in the hole!
Quick microwave breakfast is my new quick fix for the kids’ breakfast.
This microwave breakfast is also so versatile and you can literally raid the fridge and add whatever the children like. Here are a few ideas to add to the egg in the bun:
bacon and cheese
Spinach and feta
leftover chicken and pizza sauce
chopped ham and camembert
You see the possibilities are endless. Best of all the kids can make their own. One minute in the microvawe oven, I mean really, that quick! It’s a winner.
Of course if you are as lucky as I am to be working with Bedouin Nomadic Cuisine Products you will add some Labneh Cream Cheese and smoked trout to your quick microwave breakfast. Just like that you have a very delicious breakfast, fit for a fancy ladies breakfast or some other breakfast celebration.
I think this combination will also work in these potted eggs I made last year. This makes it a banting-friendly option. What I love about this idea is that I can prep the bun-baskets the night in advance, just leave the egg off. Next morning the kids take there breakfast bun, crack the egg open and voila, they have made their own quick microwave breakfast.
Quick microwave breakfast
6 crispy sesame buns
2 cups baby spinach – raw
6 Bedouin Labneh Cream Cheese balls – or replace with feta or cream cheese
salt and pepper
6 pieces smoked trout – optional
trout roe – optional
Cut a whole in the top of each bun. Fill with a small handful of spinach. Place the labneh ball on top of the spinach. Season with a little salt and pepper. Crack the egg over the labneh and season again. Place in the microwave for 40-60 seconds on HIGH. (time depends on how you prefer your egg) Serve with fresh trout and roe or maybe hickory ham and rocket.
