Two Minute Noodle Salad – it’s a keeper!
This Two Minute Noodle Salad I can eat every single day.
So many Two Minute Noodle recipes online, but most of them are loaded with expensive ingredients which no longer makes it a rand stretcher. Look, I know I will be in trouble with the purists about the nutritional value of two minute noodles, but hey this is my kitchen….
For me, this salad ticks all the right boxes. It is sweet, sour, salty and bitter and then you also have crunchy and chewy and……. see what I mean. You just have to try it. I am happy with a bowl of Two Minute Salad on its own, but for the carnivores in the house, I stir-fried pork strips and served it on top. They were stoked. The best part of this recipe is, that you can up or down-size it. If it is only you, use one packet, but if you are making it for a crowd, just add on. I would say one packet per person if that is all you are serving. If you serve it as a side salad, most probably two people per packet.
I use the PnP Sweet and Sour Chicken Noodles or the Sweet Thai Chili Flavor, both are delicious.
Two Minute Noodle Salad
3 x 75g packets Sweet Thai Chili Flavor Noodles
100 ml canola oil
15 ml sesame oil – optional
30 ml thick soy sauce
juice of 1 lime
15 – 20 ml honey
3 spring onions – chopped – green and white parts
½ cup chopped coriander
1-2 red chilies – finely chopped
½ cup salted peanuts – finely chopped ( you can also use cashews)
Place the noodles in a large bowl, keep the packets of sauce mix one side. Pour boiling water over the noodles so that they are completely submerged. Allow to stand for 2-3 minutes. Rinse under cold water and keep until needed.
Empty the sachets of sauce mix in a bowl and add the oils, soy, lime juice and honey and mix. Pour over the noodles and mix. Just before serving, add all the other ingredients and give it a good toss. Enjoy.
