One Cup Yogurt Muffins – Sweet or Savory

One cup Yogurt Muffins is perfect for a baking session with your kids.
These One cup Yogurt Muffins I saw at the Spar Junior Chef event that was held last Saturday here in Cape Town. It seems as if I was under a rock somewhere, because the internet is flooded with this clever recipe. Most of the recipes are for sweet muffins or loaf cakes, because children like sweet yogurt. I immediately thought about the possibility to change the recipe into a savory treat. We have in the meantime baked both and it works. As long as you have the formula right, the recipe can go either way. So you can have something savory for morning tea and something sweet for afternoon tea.
Obviously for the savory version your must use natural yogurt and I prefer Fairview Full Fat Yogurt, but for the sweet muffins you can basically use any fruity flavor you feel like. I used strawberry yogurt.
One cup Yogurt Muffins
Ingredients
1 x 175 g tub fruit yogurt – decide beforehand if you are going to do sweet or savory
1 x 175 g tub Olyfberg Olive oil
1 x 175 g tub sugar
2 eggs
3 x 175 g tubs self raising flour
2 x 175 g chopped berries
Method
Pre-heat oven to 180C. Mix all the ingredients, except the berries in a mixing bowl. Lastly fold in the berries. Scoop the batter into a muffin pan that your sprayed with Spray n Cook and bake for 12 – 15 minutes.
Glaze with the following:
125 g icing sugar
juice for 1 lemon

cheese and chives
crispy bacon and cheddar
feta and chopped olives
Marmite and cheese – about 2 t marmite mixed into the batter
sundried tomatoes and cheese
Sweet Muffins
cranberry and walnuts
choc chips – white or brown
grated apple and cinnamon
chopped berries
lemon and poppy seeds – 2 T lemon zest and 2 T poppy seeds
