Camembert Honey Walnut Phyllo Cigars

Camembert Honey Walnut Phyllo Cigars – my suggestion is to make as many as you can, because they will fly off the snack platter.

These Camembert Honey Walnut Phyllo Cigars can be made, frozen and fried just before serving for that extra delicious crunch. I love the combination of the creamy melted cheese, the crunchy nuts and then of course the sweetness from the honey.


Before I get to the recipe though, let me talk to you about phyllo or filo pastry.

Phyllo is a unleavened dough which is extremely thin. It is used for making all sorts of pastries such as baklava and börek in Middle Eastern and Balkan cuisines. So many people are scared to use phyllo, but most  Filo-based pastries are simply made by layering many sheets of filo brushed with olive oil or butter before baking.

I love having a pack or two phyllo pastry in my freezer. I can make snacks or meals in a jiffy and most recipes make with phyllo present really well. This Spiral Phyllo Cheese Pie is a show stopper and so easy to make. Even when I make a hearty chicken pie, I take a short cut every now and then by using phyllo. This Vegetarian Spinach and Feta Pie is delicious and ready in no time at all. Phyllo pastry has no specific taste, so it is perfect for sweet and savory dishes. So the flavor combinations for these cigars are endless, just try my filling first, then you can start to play.

Camembert Honey Walnut Phyllo Cigars

makes 18

Ingredients

1 x 100 g Camembert

125 ml chopped walnuts

100 ml honey

5 ml cinnamon – optional

6 sheets Mediterranean Delicacies Phyllo Pastry

50 g butter

500 ml oil for frying

125 ml honey

fresh thyme flowers or lavender for serving

Method

Melt the butter in the microwave oven and have a pastry brush handy. Cut the cheese into 10 cm long fingers, about 5 x 5 m thick. Finely chop the walnuts. Take 2 sheets of phyllo pastry and place on a clean working surface. Brush the top sheet with melted butter. Place the sheets in front of you , short sides facing you. Now Cut the two sheets in half down the middle and then each half into three long strips. Place a piece of cheese on the narrow end of each phyllo strip. Top with some nuts and a sprinkling of cinnamon (if using). Start rolling the cigar by folding the sides of the phyllo strip in while rolling it up. It ensures that the filling stays inside when you fry it. Repeat with all the strips until you have 18 cigars. Heat the oil in a small pot and fry the cigars until golden brown. Drizzle with honey and more chopped nuts. Serve with a sprig of fresh thyme or lavender flowers.
