Christmas Baked Alaska

My Christmas Baked Alaska is perfect for a South African Christmas. A Summer Christmas with sun and sea and open skies.

The Christmas Baked Alaska also has a surprise element, because no one knows what is on the inside, until you cut it. Kind of like a Christmas gift….. just edible! The part I like most about this dessert, is that you can prepare it in advance. In fact make a couple of them, sit back and relax for the rest of your holiday. Once you have the hang of it, you can make any flavor you want. My mind goes to Chocolate ice-cream, Whispers and Nutella, Vanilla Ice-cream and Lemon Curd or Caramel and Chocolate. See, the mind goes everywhere.

For our Christmas version, I want to stick with berries, nuts and vanilla. Fresh and simple flavors. I also like biting on a piece of frozen berry every now and then. Just the thing for the hot summer days to follow.

You know with me, it is all about making it easy so for this purpose we are using store-bought vanilla ice-cream, but you are welcome to make your own if you of the adventurous kind.

You will need:

1 x glass or plastic bowl – mine was about 3 liter size

makes one big one- serving 10 people

Ingredients

1 shop-bought jam roll

3 liter vanilla ice-cream

1 cup/250 ml strawberries – chopped

½ cup/125 ml – pistachios – toasted and chopped – or replace with chopped Eat-sum-more biscuits ( especially if you cater for people with nut allergies)

1 cup/ 250 ml blueberries

½ cup/ 125 ml raspberries

For the meringue

6 egg whites

350 g castor sugar

3 ml cream of tartar

Method

Line the bowl with plastic wrap and allow long pieces of the plastic to hang over the edge of the bowl. You will need those to close the dessert for freezing. Make sure you take most of the bubbles out. Cut the jam roll in 5 mm slices and line the entire bowl with the cake. fill the gaps with little off cuts. Remove the ice-cream from the freezer and allow to thaw slightly. Mix in all the ingredients berries, nuts or biscuits into the ice-cream and scoop into the cake lined bowl. Use the back of a spoon and flatten the top of the ice-cream. Cover with the over-hanging plastic and freeze until hard.

When you are ready to present this beaut:

Beat the egg whits in a blender until it forms soft peaks. Add the cream of tartar and then while the machine is running, add the sugar bit by bit and keep whisking until you have a glossy meringue. Spread the meringue in a thick layer over the “cake” and make swirls with the spoon, or scoop the meringue mixture into a piping bag and pipe as in the picture. Decorate with edible flowers, more berries or even spun sugar for a jaw-dropping effect.
