Fried Tomato salad

Fried Tomato salad is definitively meeting healthy eating halfway.

Fried Tomato salad has all the elements of a good salad. The crunch, creamy, bitter, tart and then it meets up the forbidden world of fried food. Yes, forbidden for many as we started the new year with resolutions to eat healthier.

Usually after a December holiday and all the holiday ice-creams, Christmas Trifles and beach burgers, everyone is on some form of a diet. So, my mid-day, I am starving. No fry-up breakfast, no mid-morning tea and a cookie. It is tough. So, I through of this salad. It’s only 50 % naughty, but oh so nice!


Fried Tomato salad

I did a campaign for KFC a few years back. In their recipe book, of course coming from the south, is  a recipe for Fried Green Tomatoes. I fell in love at the first bite. Maybe it was because the association with the movie, Fried Green Tomatoes.

Well, my tomatoes were certainly not green, in fact they were bright red and ripe. So the combination of fried tomatoes, fresh greens, soft stringy mozzarella and just salt and pepper, was just perfect. You can of course crumb and fry the cheese and leave the tomatoes fresh, but I love the juiciness of the tomatoes inside the crunchy crumb coating.

Fried Tomato Salad

serves 6 – 8

Ingredients

3 ripe but firm tomatoes

2 cups fresh bread crumbs

1 cup flour

2-3 eggs

salt and pepper

vegetable oil for frying

For the Salad

fresh rocket or salad leaves of your choice

1 – 2 balls mozzarella

a few fresh tomatoes

olive oil – optional

lemon juice

salt and pepper

Method

 

Slice the tomatoes in thick slices. Set up a crumbing station with your egg in a bowl, flour in another bowl and also your breadcrumbs in a separate bowl.
Dip the tomato slices in the flour, then egg mixture, shake off the excess egg wash and immediately dip it in the flour again. Dip back into the egg wash and lastly drench it with breadcrumbs. Repeat with all the tomatoes. Heat a skillet on the stove and add the oil. Fry the tomato slices, turning once to brown each side. Drain on kitchen toweling and keep until needed

To assemble the salad, simply place the leaves in the bottom of the plate, cut open a few tomatoes ( different colors are beautiful). Then place fried tomatoes on top and lastly the torn mozzarella. Season with sea salt and pepper and a drizzle of olive oil and a squeeze of lemon juice.
