Love Bites on RSG and we’re making sizzling summer salad.

When I invited Caylee from the blog “Love Bites” to join me for my regular RSG slot on Thursday morning, I asked her to send me a couple of recipes so that I could choose a suitable one. I think she revealed more about her personality than she intended to, because all the recipes were for sweet things…desserts, such as yummee melkkos.
I think it was quite apt, because she is such a sweetie!
Anyway, I asked her for a recipe that spelled “SUMMER” in big letters and this is what she came up with: Chicken and Mango Salad. Again, quite a sweet salad, but it reminded me of summer holidays, beach vacations and island memories. I loved the dressing idea, because frankly, the thought of sweet mango with yogurt and fresh mint, makes my toes curl.
Sadly we are not yet in mango season here and if you should be lucky to get them, they are not at their prime just yet, so I used peaches instead. I also replaced the chicken with goat’s cheese and for me both can work, maybe the chicken option is more a man thing than goat’s cheese.
The secret however is in the yogurt dressing.
serves 6
Fresh lettuce leaves – rocket, butter lettuce or baby spinach leaves even
1 onion thinly sliced
6 chicken breasts, cooked
2 fresh nectarines, sliced
1 avocado, sliced
1 mango
½ cup yogurt
¼ cup 1000 Island dressing
1 tablespoon chutney
1 tablespoon mint, choppedMethod
Quick all the dressing ingredients together. Place a handful of fresh lettuce leaves on each plate.
Cut the chicken breasts and steaks and place on lettuce. Divide the mango slices, onion and avo between the plates.
Serve with the dressing and delicious coarse bread.
