Chicken Roll came to my rescue a few nights ago. Hubby invited someone for supper and I was so unprepared.

Luckily for me, I received a Today Pastry Mystery Basket earlier that day and I had leftover chicken from the previous night. This leftover chicken roll reminded me of my days in the Knysna School hostel.

Our house mother Tannie Rina made magic with leftovers. Sometimes the leftovers were far better than the original dish and I always marveled at her resourcefulness. So one day I asked her why she was so thrifty and “stingy” with her budget. Her answer blew me away. She said the Department of Education did not understand that all children should have a Christmas, so there was never a budget for a Christmas Party. She saved and pinched here and there,but at the end of the year, she made sure that every child had a little gift and an abundant Christmas Dinner. I learned a very valuable lessen that day…….

Leftover Chicken is a perfect example of being thrifty in your kitchen. I hardly ever roast only one chicken. After all you have to switch the oven on, make use of all the oven space and roast some vegetables, tomatoes, bake some brownies etc. Leftover chicken is not only good for this delicious chicken roll, but take a peek at this Oriental Chicken Noodle Salad and this strange but delicious Chicken Cheesecake. So I hope I have convinced you to always keep leftover chicken handy for crisis meals. Also make sure you always have a few rolls of Today Puff Pastry in your freezer. Just remember, it does not have to be a chicken roll, it can be a salmon roll, bacon roll, egg roll……. let your imagination go wild!

So, back to my Today Mystery Basket and my chicken roll, I had Today puff pastry, a bag of baby spinach, a butternut and some feta cheese. To make this a little more filling, I added shredded leftover chicken.

Ingredients

Instructions
  1. Preheat oven to 180 C.
  2. Peel and cut butternut and steam until soft in the microwave. Pureé in food processor and season with butter, salt, pepper and fresh nutmeg. Allow to cool.
  3. Steam spinach in microwave for 2-3 minutes. Pureé in food processor and season with butter, salt, pepper and fresh nutmeg. Allow to cool.
  4. Unroll the puff pastry on a clean work surface.
  5. Spread the spinach pureé over the entire surface of the pastry.
  6. Gently spread the butternut pureé over the spinach.
  7. Crumble the feta cheese over the pureé.
  8. Lastly place the shredded chicken down the middle, lengthwise
  9. Fold the two sides to overlap and close the roll. Place on a baking sheet, lined with baking paper with the fold at the bottom so that the roll does not open during baking.
  10. Bake for 30-35 minutes until golden brown and puffed up. Serve with a green salad.
Recipe Notes

The roasted chicken is optional, you can add salmon, tuna or leave it as a vegetarian roll.

    We enjoyed the Chicken Roll on Sunday. I prepared it last Saturday afternoon and baked it for lunch Sunday. We loved the Roll and the leftovers were even tastier. This one will be a regular served in this family. Thank you Nina!

    It was really delicious, I replaced the spinach with broccoli flavoured with Ina Paarman’s garlic and herb seasoning. Very easy and quick to make. Thank you Nina.

    Baie dankie ek is mal oor jou resepte, want dit is so maklik vir gewone mense soos myself. Daardie hoender kaaskoek is volgende op my prober lysie, dit lyk uit die boeke uit lekker!!
