Tangy Chicken Kebabs with creamy orange mayonnaise

Making chicken kebabs in the middle of winter when it is cold and Cape Town is showing you her cold shoulder, seems like such a crazy idea, but enjoyed around a cosy fire with warm pitas and maybe even a light vegetable soup simmering somewhere, it could work..... oh, alright, soppy story doesn't work for you? Ok, the truth, I have a teenager son, he eats all the time and he is constantly hungry......I love it, but what do I feed him when he comes home from school? Chicken Kebabs.......

Lemon and Thyme Roast Chicken on RSG

Lemon and thyme were by far the dominate flavors when I asked readers what their secrets are to the perfect roast chicken. Lemon juice in various forms......drizzled, stuffed up the bum of the poor chicken or simple added to the stock. With thyme there was a slight dispute, some prefer the herb and others swear by "time" as in "take your time with a roast chicken. Meraai se Chicken Pie (Paai) on RSG

Meraai se Chicken Pie will feature on my radio slot tomorrow morning on RSG. I do not know who Meraai was or where this pie comes from, but it certainly is the best Chicken Pie I have EVER had. I must have known that a pie of this caliber can only come from Bloemfontein........hearty, comforting, unforgettable .....just like the people from Bloemfontein.

This Moroccan Chicken Pie was so delicious and if this is the kind of quality tried and tested recipes I can expect to find in Jane-Anne"s new cookbook, I certainly cannot wait for its arrival on our shelves mid 2012. Fruity Chicken Bake

Lip smacking, rib sticking, finger-licking fruity chicken bake. Sorry folks, got a bit carried away, but be prepared to write this recipe down quite a few times. You can of course just send them to My Easy Cooking and save yourself the trouble. Unless of course you want me to be your closet chef...I don't mind at all, just make the fruity chicken, you'll be so glad you did.

Food and the Fabulous Chicken Tagine on RSG

This Chicken Tagine by Ishay from Food and the Fabulous is a welcome belly warmer after all the Easter Buns, Chocolate treats and other sweet temptations like my first batch of Easter Macarons with White Chocolate and Passion fruit Ganache. I made Chicken Pot pies...finally! My family has been nagging me for ever to make chicken pies again, but frankly, it was just too hot to even bother, so when Easter weekend arrived and brought with it the lovely rainy weather, I made pot pies, while the rest of the the Christendom made roast lamb. I hope you all had a wonderful Easter Weekend, I was surrounded by family, friends, good food and lots of love to go around.....

Nutty Chicken Schnitzels with dried fruit chutney

My family loves chicken schnitzels, but because it is a bit of  a labor-of-love with-thing with the stages of egg wash, flour, egg wash again and then the crumbing, I very seldom make them. I was playing around with ideas to make this simpler, but not lose any of the taste. Simpler by removing one or two of the stages.I think I might have succeeded, what do you think?

Pineapple Chicken Burgers with Mango Salsa

These tasty Pineapple Chicken Burgers were born out of  sheer necessity....... necessity to spend as little time in the kitchen and as much time in the pool as possible. Seriously, I cannot remember when last or if I have ever been struggling with heat as much as this season. Having said that, my biological clock is ticking much faster than I would like it to so......maybe it is not the weatherman's fault at all....

The Food Fox on RSG

This Thursday just after 9 on RSG, I will be in the studio with Ilse van der Merwe from the blog, The Food Fox. We will be making a delicious summer salad. Perfect for the scorchers we have been having here in Cape Town. Reading through her blog is such a pleasure, I sense her deep, sincere love affair with food and can relate to that so I cannot wait to meet her in person.

I think she revealed more about her personality than she intended to, because all the recipes were for sweet things...desserts, such as  yummee melkkos.
I think it was quite apt, because she is such a sweetie!

The aroma of roast chicken drifting through my house fills me with nostalgia and a fuzzy feeling every time. Caylee's chicken Recipe was the one I chose from all the ideas, links and recipes I received yesterday  after I posted on Twitter and Facebook that I am in need of a new Chicken Recipe. I got quite a response for my busty Roasted Chicken too, but that is a story for another day!

Chicken Breyani from the Bo Kaap.

To me Chicken Breyani and the aromas of a fragrant curry simmering somewhere are reminiscent of the Bo Kaap. Whenever I visit Atlas Trading to stock up on spices, those are the aromas that await me in the area.

Jamie Oliver's Chicken - Simple Food, just the way I like it!

Jamie Oliver cooks simple food, period! I am sure at his restaurants he will dolly up the plates, 'cause that is the cheffie thing to do, but what I love about Jamie, is that he has made home cooking popular again. I dare anybody to sit and watch a Jamie programme and  not get inspired to the point where you just want to get up and start cooking something.......

Chicken En Papillote - Surprisingly good chicken!


En Papillote literally means to cook "in parchment". It is a French term for something that the Italians call al Cartoccio. Cooking en papillote is a method in which you seal the food in a pouch and bake. The food essentially steams in the oven in its own juices. Even in Indonesia they use a similar cooking method, but the food is wrapped in banana or cassava leaves  not parchment paper.
