Greek Honey Cakes

I had these Greek Honey Cakes in my mind the minute I woke up yesterday morning. For a change we had no sport, no birthday parties and no shopping to do....just a chilaxing Saturday with my own little family. I also like to do a few recipes on Saturday mornings just to get ahead with my posts for the week. Hubby and the children normally watches a movie together and I get to spend a quiet morning in my kitchen......

My Easy Chicken Pot Pies to celebrate the arrival of Autumn

I made Chicken Pot pies...finally! My family has been nagging me for ever to make chicken pies again, but frankly, it was just too hot to even bother, so when Easter weekend arrived and brought with it the lovely rainy weather, I made pot pies, while the rest of the the Christendom made roast lamb. I hope you all had a wonderful Easter Weekend, I was surrounded by family, friends, good food and lots of love to go around.....

Easter Macarons with White Chocolate and Passionfruit Ganache

Easter Macarons with White Chocolate and Passion fruit Ganache...... You haven't seen such a long post title on My Easy Cooking in ages, right? Well, I think it is ok to every now and then put your fancy jacket on and do something special, something extraordinary, something you would not normally do. Making macarons is something I have put off for too long, it was time I put my fears to rest and give it a go... Oh, I so wish I still had my blanky, my safety blanket......

Malva pudding with dates and pecan nuts

Do I love Malva Pudding? You be the judge, because after this post, I will have 4 varieties of this South African classic in my recipe arsenal. Just when I think, now I have the winning recipe, someone kicks it up a notch. Today, this someone is the feisty, bubbly and very organized Ilse van der Merwe or as we know her here in blogland as The Foodfox.

Easy Easter Breakfast Buns or Roll on RSG

If you see the recipe for this my Easy Easter Breakfast Buns you will kick yourself and say: "Now, why did I not think of that?" Maybe you have and if so, drop me a line, I am eager to try new things. With Easter around the corner, long weekends ahead and all my children at home, I love spoiling them for breakfast. There is something to be said for coffee brewing and something sweet baking in the oven. what a way to wake up?

My Easy Chocolate Eclairs

My easy Chocolate eclairs? What makes this recipes so special that I can claim it for myself? Trial and error and 2 batches of  flop eclairs. In my family if you have learned something the hard way, we call it "paying school fees", because after all lessons are learned in school and in my case the school of life.... Now, what does life lessons and chocolate eclairs have in common......

Homemade Puff Pastry on RSG

Homemade puff pastry is a bit of a contradiction to many home cooks, like me. You see, we all love the light, flaky pastry, but the thought of rolling out the dough, adding butter, folding, resting, adding more butter, just sounds like too much work. So we all opt for the bought version. I don't have a problem with store-bought dough, but the quality is only good if you have a good supplier, otherwise it is terrible....

Chocolate Samosas - hardly a recipe!

You don't need a recipe to make these Chocolate Samosas! I know that by saying this, I am shooting myself in the foot, because this is after all a recipe blog and why would you be here if it was not for my easy do-able recipes. Good news, this IS an easy do-able recipe and you will be ever so popular at your next dinner party!

Mini Butterscotch and Banana Pavlovas on RSG

I had to think long and hard about this weeks radio program on RSG. The recipe was the easy part. The pavlova was a request from our house guest, the banana and butterscotch sauce a quick fix (that turned out to be a stroke of genius) and the blog I turned to for a recipe was The Gorgeous Gourmet. The theme or shall I say the thought pattern behind this post was somewhat challenging, let me explain....or at least start at the beginning of my story!

Yes, you can bake cake in an Air Fryer!

Can you bake in an Air Fryer? If I had a dime for every time I answered this question, I would be able to buy quite a few Air Fryers and give them away for free. I like giving things for free, that is just how I roll! Sadly, I don't have all those dimes, but  I just want to show you what is possible and give you a quick cake recipe.....for free!

Donuts or dougnuts......as if the spelling matters!

I am very particular with donuts or doughnuts, which ever you prefer. They must be soft, a light oily surface, but when you bite into a doughnut , it must be pillow-soft, with no oil. An oil-drenched doughnut, gives me the creeps and heartburn for a week! Maybe that is why I eat donuts once a year and suffer the consequences if there are any. Well, I don't know if it is a good thing or not, but since I've  made these baked donuts, things have changed, no more greasy donuts and no more horrible consequences!

Countdown to Christmas Menu - My Festive Roulade on RSG

Today we move from Starters on our Christmas Countdown Menu to desserts! Yes, your eyes are not misreading something, nor have you missed the "Main Course", but last week on RSG I promised my listeners a Christmas dessert recipe so I had to make a slight change in my  post schedule. Do not despair though, I will still do them still before I go on a well deserved break!

Fudgy Coffee Cake with Caramelized Pears

Confession time! I have always thought that coffee cake is something with a coffee flavor. So every time I read a recipe for coffee cake, I gently clicked away, because it is not something I particularly like, except maybe in my Chocolate Ganache Cake. I once saw a recipe and a photo of a coffee cake and nearly contacted the creator of it to fix her recipe, because no where in the list of ingredients did I see coffee. Duh!

Chocolate-filled Shortbread on RSG

As if shortbread is not sinful enough, imagine little shortbread cookies with a heart of chocolate. Oh my word! How delicious can it be? Well, they are so delicious that it is very hard not to take one every time I walk passed the tray in the kitchen.

Chocolate Peanut Butter Brownies and a confession!

Peanut Butter .....mon indulgence secrète. Yes, my little secret indulgence when no one is watching...In the morning early when I pack lunch boxes( and yes my husband wants peanut butter and jam sandwiches everyday), I always lick the excess peanut butter and jam off the knife... I know, I know it is not good for me, but let us pretend.......

The Koeksister has a humble relative - The Brood Broer

The koeksister! This doyenne of the South African tea table has seduced so many with her twisted syrupy goodness. She has stripped people of their willpower and intentions to diet or lose weight. The word koeksister is from Dutch origin and literally means cookie. The koeksister is made by deep-frying dough and then dipping it in an ice-cold sugar syrup.

Off to RSG to make a cheesecake with Chef Caro!

When I start prepping for my radio show on RSG every Thursday morning, I literally have to pinch myself just to remember how privileged I feel to work with all the passionate foodies South Africa has to offer. Really, the golden thread that so delicately weaves all these people together is a unsaturated passion for food and the enjoyment thereof.

One can of tuna - Tuna Pinwheels

Who would have imagined that a humble can of tuna could cause such a stir. I have had such a response to the first of my series, One can of tuna - Tuna Pie, that I am so excited to be sharing this recipe with you. Kids, grannies, nannies, teachers, ravenous husbands, just about everybody love these little savory nibbles.

Oatmeal and Almond Strawberry Crumble

The arrival of fresh strawberries on our market shelves was quite a welcoming site and with this Oatmeal and Almond Strawberry Crumble I wanted to celebrate the departure of winter and  the arrival of the most beautiful season of all....Spring. Look, I think we here in Cape Town are still in for some very cold weather, but I smell Spring in the air!

Churros. The quintessential Spanish street snack with DieselVanilla Sauce

I think every picture I have ever seen of this delightful Spanish snack called Churros has made me want to get up, walk to the kitchen and bake them. Strangely though, I have always thought they were too difficult and finicky to make, but put a foodie under pressure and you will be surprised......
