The Food Fox on RSG

This Thursday just after 9 on RSG, I will be in the studio with Ilse van der Merwe from the blog, The Food Fox. We will be making a delicious summer salad. Perfect for the scorchers we have been having here in Cape Town. Reading through her blog is such a pleasure, I sense her deep, sincere love affair with food and can relate to that so I cannot wait to meet her in person.

When I invited Caylee from the blog "Love Bites" to join me for my regular RSG slot on Thursday morning, I asked her to send me a couple of recipes so that I could choose a suitable one. I think she revealed more about her personality than she intended to, because all the recipes were for sweet things...desserts, such as  yummee melkkos.
I think it was quite apt, because she is such a sweetie!

Easy Salad Recipes are just about all I have energy for with temperatures ranging from 35-40 C here in Cape Town. The beaches are filled to capacity and the cooldrink and ice-cream sales must have escalated tremendously in the last 2 months.

Bread Salad ....or isn't it?????

Bread salad or Tomato Salad......what shall we call it? A Bread Salad or Panzanella requires no cooking at all and is basically just stale Italian bread mixed in a salad with tomatoes, cucumber, onion and a very good olive oil. So I guess this is not a classic Panzanella then... because I made croutons and I slow roasted some tomatoes.

Liver is one of those things that you either love eating or hate eating!!! I love it! Even as a child, I loved it, served with mash and peas! Liver is sometimes used in the prevention and treatment of a variety of nutrient deficiency illnesses. because it is a highly concentrated source of quality proteins, vitamins and minerals.

I love to combine fruit and vegetables in the same salad. The sweet and savory flavors on one plate really appeal to me! At the moment I am trying to make the most of all the fruit and vegetables that are still available although we are now moving towards autumn.

Salads are always a good choice when eating out or at home. It is an easy way to incorporate your daily 5 portions of fruit and vegetables. It is important to keep the salads interesting by adding fresh herbs, combining different types of lettuce with various fruits and vegetables.

Warm bean salad..good on it's own or a perfect partner for Lamb Chops.

When I go shopping, I always add a tin or two of beans and keep them in my pantry...they always come in handy when time is your enemy and you need something substantial and nutritious to put on the table.

When beef and mutton were on every menu for the entire holiday, it is difficult for me to wean off meat so easily. I also do not think that red meat in moderation is so bad for you, so I had to find a midway. AH!! Why not cook 1 steak instead of 4 and we all share this in the form of a salad. Clever huh!!!

Lo and behold, my computer packed up again...I was devastated and could just imagine losing every photo or post I have ever written....ok, ok I will learn to back-up more often! Finally this morning I got my computer back and everything seems to be in working order.

Someone asked me today: "Do you guys ever eat normal food?" I could hear she was bothered by the tone in her voice and I had to help her out of her misery. "Of course we do...but I refuse to eat an "ugly" plate of food."

Tomato Salad with Fresh Mint and Danish feta


Here it is, my first organically grown tomato. Isn't she a beauty? There definitely is something sensual about her shape, don't you think. As this was the only tomato ready for picking I couldn't really experiment with cooking, but I did have fun with the camera instead. My family loves tomatoes - Dad loves Cream of Tomato soup, Christopher loves Toasted cheese and Tomato sandwiches, Chloe likes Napolitana Sauce on pasta and my favorite is this salad:

As you all know, hubby went away for business and on Friday night my children went for a sleepover at their cousin. I woke up on Saturday at about 5am and dozed off again until 6am - I then took my dog, Thandi, for a long walk and found these beautiful nasturtiums on route.
