Homemade apple-and onion soup. A big pot of homemade soup bubbling away on the stove must be one of my most comforting foodie thoughts . I love the warmth and ambiance it creates in my kitchen and the thought that there will be ample food for my family and even a few more unexpected guests, simply gives me a warm fuzzy feeling inside.


Homemade apple-and onion soup. Why, all of a sudden am I waffling on about homemade soup, you may ask! There are over a million searches for “soup recipe” in a month on Google and I am sure every one of those searches are met, because there are just so many soup recipes around.
Homemade apple-and onion soup. Well without sounding too forward, that long list of soup recipes would not be complete without my Homemade Roasted Apple and Sweet onion soup with Cheese and Candied Apples!
About a month ago I received an email from Woolworths Taste Magazinethat called for all to submit their best soup recipe.Not only do you stand a chance of winning R50 000 (about $6700 or 4,500 pounds), but your winning soup recipe will be included in their Woolworths Soup Range for 2011.  At first I decided not to enter, simply because I couldn’t think of a knock-out soup combination and  I was also extremely busy with other projects. On Friday however, inspiration hit me really hard and as you all know we as foodies function at our best under this kind of pressure. It was chaos in my kitchen! My parents have just arrived for the weekend and in between the huzzle and buzzle of greeting and off loading the mountains of foodie treats, I created, styled and photographed this delicious home made soup. Whether this will be the winning soup or whether they will like this combination, only time will tell, but I had my husband breathless and my son speechless, and that is more than enough compensation for me.

Roasted Apple and Sweet Onion Soup with Cheese and Candied Apples

4 Granny Smith or Golden Delicious Apples – peeled, cored and cut in thick chunks
1 large onion – peeled and cut in large chunks
1 tbsp butter
1tbs vegetable oil
a few sprigs of thyme
1-2 tsp sugar -I used brown
250ml cream
125ml Woolworths mature cheddar cheese – grated
80 gr Winelands Blue cheese
1 tbsp corn flour
125ml milk – optional
250 ml chicken or vegetable stock
salt/pepper

For the candy apples

1 large Granny Smith or Golden Delicious Apple
100ml sugar
100ml water

Heat an oven proof skillet on the stove and add the butter. When the butter is bubbling, add the sugar, apples, onion and thyme. Brown the apples and onion slightly, tossing the pan now and then to prevent sticking to the pan. If you wish, you can roast the apple and onions further in the oven or just turn the heat of the stove down and roast it on the stove. When the apples are soft but not broken up, add the stock and boil for about 3 minutes. Now transfer the content of the pan to you processor or liquidizer and puree the soup. Add the cream, milk and corn flour and blitz in the processor until you have a smooth soup. Pour the soup back to your pan/pot and allow to cook. If the soup is too thick, add a little more milk. Add the cheeses and allow melting into the soup. Season to your taste. Serve with more crumbed cheese and candy apple chips.

To make the candy apple chips

Put the sugar and water into a pot and slowly heat until the sugar
has melted. Cook until you have thin sugar syrup.
Slice the apple as thinly as you can, I use a mandolin.
Dip each apple slice into the sugar syrup and place on a baking
sheet that has been sprayed with nonstick spray. Bake in a moderate
oven (150C) until golden brown.

    Sounds delicious, although I would prefer a less cheesy soup. Was wondering if you have a orange and butternut soup recipe that I can try?
