Mediterranean -Pasta-in-Minutes!

You can literally make this Mediterranean Pasta in Minutes – the amount of minutes it takes to boil the pasta! Yes, that is how quick and easy it is! If you can slice a few tomatoes and switch on a blender, then you have all it takes to make this Mediterranean Pasta.
However, don’t think for a minute that this salad is bland and tasteless just because you concocted it in such a short time, on the contrary, this salad has big, bold flavors and requires nothing else to make it a complete and nourishing meal!
Whenever I see or hear the word “Mediterranean” I think of long summer nights(thanks to Shirley Valentine) and tables and kitchens brimming with  fresh ingredients and old Greek and Italian ladies slaving away in their kitchens preparing their family’s meals with such ease and  simplicity that I sometimes wonder why we  have to make recipes so complicated.

Thanks to chefs like Jamie, Rick and Ina who have brought these simple recipes into our homes and into our kitchens. Now, without spending a cent on traveling, the aromas and flavors of the Mediterranean will soon whizz you away to some dream destination….
A word of advice though! Stock up on a few interesting ingredients so that when inspiration hits you, these ingredients will be ready and waiting for you in the store cupboard. A few such items that I like to have as stock is:
capers
anchovies
olives – green, black, pitted or not
sun-dried tomatoes
pesto – basil, rocket or mint
nuts such as pine nuts, almonds, cashews etc
different oils – olive, walnut, sesame etc
and or course, get a few essential herbs growing in pots – basil, parsley, oregano, thyme, sage etc
Mediterranean Pasta in Minutes
serves 6 as a main course/ 8 as a side salad
Ingredients
500 pasta – screws or shells are perfect
1 bunch of spring onions – chopped( I used white and green parts)
6 sun-dried tomatoes in olive oil – chopped
2 heaped tbsp capers
250gr fresh baby tomatoes – use different colors for a more colorful salad
1 cup pitted black olives
lots of fresh parsley-chopped
a handful of fresh basil
2-3 wheels of feta – cubed
Dressing
6 sun dried tomatoes – chopped
2 tbsp capers
salt/pepper
zest and juice of 1 lemon
about 125ml olive oilTo Serve:Basil Pesto from Pesto Princess

Boil pasta according to instructions on the packet. Place all the other ingredients, except the feta cheese in a bowl and mix. Once the pasta is ready, drain and allow to cool off for just a few minutes(you do not want to cook the other ingredients) The pasta has to be warm though, for better absorption of flavors. Place all the dressing ingredients in a food processor and blend until you have a thick flavorsome sauce. Mix in with the pasta and serve with more fresh basil and feta. This is a meal all on its own, but if you want to use this as a salad, it goes really well with grilled fish or chicken. To take this salad up a notch(or two), serve with a big dollop of Pesto Princess Basil Pesto! Yum!
