Mexican Huevos Rancheros for Meatless Monday

Nothing can combat this cold weather we are having like adding a little Mexican heat and spice to a meal and that is exactly what I did when I made Huevos Rancheros for breakfast on Saturday.
We have not had a lazy Saturday in ages and  yet both hubby and I are in desperate need of  some rest and relaxation. So when Mr Winter covered the entire Cape Town in a thick blanket of clouds, it was time to pull out all the stops….fireplace burning, blankets, hot chocolate and lots of spicy food……….
With a lazy Saturday comes minimum effort and dirty dishes in the kitchen so I had to turn to my new kitchen toy, the Phillips Air Fryer. Imagine this, Huevos Rancheros with no greasy pots and pans – almost impossible isn’t it? 
Huevos Rancheros is a classic Mexican breakfast and is basically an egg dish originating from the farms where money was a scares commodity.  Authentic Huevos Rancheros consists of fried eggs, served on fried corn tortillas and topped with a tomato-chili sauce. On the side you can expect a few slices of guacamole and some re-fried beans. My version was easy, quick and to top it all, a very low fat version. I am sure you can make this dish in a normal oven too, but in this case I used the Air Fryer.  

Mexican Huevos Rancheros
serves 4

Ingredients
4 flour tortillas or 4 slices of white bread
a little butter
1 x 410gr All Gold Mexican flavor chopped tomatoes
4 eggs
1 avocado
smoked paprika
a few chili flakes – optional
salt/pepper
fresh coriander
Method
If you are using a normal oven, preheat it to 180C. Butter 4 small ramekins and if you are using bread, cut the crusts off and butter the bread too. Line the ramekins with the tortilla or bread and spoon about 2 tablespoons of the tomatoes in the ramekins. Break open an egg  on top of the tomato mixture. Season with salt, pepper and a little smoked paprika. Bake in the Air fryer for about 4 minutes or in the normal oven at 180C until the eggs are cooked. If you are in need of something more substantial, sprinkle some grated mozzarella on the top and bake for 1 minute more.  Gently remove from the ramekins and place on a plate. Top with more of the tomato sauce, some chopped avocado and fresh coriander.
