This Chicken tastes like KFC mom!

I can’t say that I have ever tried to make KFC Chicken or even tried to figure out which eleven herbs and spices the Colonel uses in his recipes, but I felt pretty darn good when my children thought my chicken tasted just as good as KFC….and that was without even trying.
Imagine if I really tried to match the Colonel spices…….I think I will most probably get 5-6 spices right! What is it with us crumbed food? I think it is most probably the one way of cooking food  that  people miss most when they try and shake some excess weight, because let’s face it, food fried in crumbs is not exactly Weight Watcher friendly. A Crumbed Pork Chop is hard to resist and my latest downfall is Risotto Balls all crispy on the outside and soft, gooey and cheesy on the inside! Look, bottom line is this, crumbed food is not good for you, but if you have it once in a while and in moderation, they could be no harm.

Before I get on to the crumbed chicken, I want to tell you about the lovely cheeses I bought from a little deli in Ceres. First of all, the deli has no name and no one in the deli could tell me where they source the cheese from, but they were so beautiful in their bright red, white and green wax coats, that I could not resist. The cheeses comes in a few flavors, but I bought the chives, sweet chili and mature cheddar. The minute I tasted the sharp cheddar, I had visions of a crumbed “something” with a rich Mushroom and Cheese Sauce. That something came in the form of chicken fillets and I have to say, it was so delicious that even I had a second helping.

Crumbed Chicken with Mushroom and Cheese Sauce


4- 6 chicken breasts
1 cup buttermilk
1 cup flour
½ tsp cinnamon
fresh thyme

2 eggs – lightly beaten
about 2 cups fresh breadcrumbs

Place a chicken fillet between two layers of clingfilm and gently pound with a meat hammer to flatten the breasts. Repeat with all the meat. Season the chicken with salt and pepper and place in the buttermilk for a couple of hours. When ready to cook the chicken, shake off the excess buttermilk. Season your flour with a little more salt and pepper and add the thyme as well as the cinnamon. Drench the chicken with flour, dip in egg wash and then in fresh bread crumbs. Place on a big tray and refrigerate for another hour or overnight.
When ready to cook, heat enough oil in a pan or a wok and deep fry the chicken until golden brown and coked through.
Serve with a Mushroom and Cheese Sauce

Mushroom and Cheese Sauce


250gr button mushrooms
2 tbsp butter
1  tbsp flour
250 ml cream of full milk
½ cup grated mature cheddar

Wipe the mushroom with a damp cloth and slice. Heat the butter in a pan and add the mushroom. Saute for a few minutes and then add the flour. When it thickens add the cream or the milk and allow to slowly come to a boil. Add the cheddar and taste for seasoning. Serve on top of a crispy crumbed chicken fillet.

    It's hard to beat a crumbed piece of chicken or pork chop. Your chicken with the sauce looks lovely.

    This sounds divine Nina. I love crumbed foods too and soaking the chicken in buttermilk makes it nice and tender. Your cheese sauce rocks.
