Mediterranean Chicken with Feta and Olives

If I see the word “Mediterranean”, my mind immediately goes to Shirley Valentine, the Liverpool mom, who regularly spoke to her wall and who one day just left a note on the fridge and deserted her chips-n-eggs eating husband and heads off to Greece for a fortnight of rest and relaxation.  I think I have two things in common with Shirley……

The one is that my husband would love chips-n-eggs more often than he gets it here in my kitchen and I am in desperate need of a fortnight’s rest and relaxation…. Chips-n-eggs I can fix tonight, but rest and relaxation will have to wait, so in the meantime, I can go to my happy place, the kitchen, and create a very simple Mediterranean meal with chicken. Maybe I can invite Shirley and we can enjoy this simple, yet delicious meal and share a few life lessons in the process…..

This easy and simple chicken tray bake is packed with the flavors of the Mediterranean and can be made in advance and just cooked in the oven 40-50 minutes before dinner. I think it can also work with fish in which case the feta will just be on top of the fish. I hope you enjoy it as much as we did!

Mediterranean Chicken with Feta and Olives

serves 4


8 chicken thighs

2 x 100g Fairview Feta with Dried Olives

salt and pepper

1 T dry oregano

250 g cocktail tomatoes – on the vine is just so pretty

1 bulb garlic – cut in half

250 ml Calamata olives

a few sprigs of rosemary and mint

a generous drizzle of olive oil


Clean the chicken thighs and pat dry with kitchen toweling. Carefully lift the skin of the chicken on one side and stuff with some crumbed feta. Repeat with all the thighs. Season with the salt, pepper and dry oregano. Place the chicken in a oven-proof dish and all the other ingredients and bake for 40-50 minutes until golden brown and the chicken is cooked right through. serve on creamy Parmesan mash.
