Salad of Smoked Snoek

Salad of Smoked Snoek. Salad for every season. During summer we eat fruits salads and in winter we roast our vegetables for salads. There is a season for everything and everything has its season……. I live by this.


Winter here in Cape Town is for snoek and patat (sweet potato) and summer is  a fresh and vibrant salad.  So what do we do when all  four seasons happen in one day, that is kind of how it is at the moment here in the mother city and in my life….. winter, summer, spring and autumn…all in one day. I suppose that is simply called …..life!

I am a winter kind of person, I like a crackling fire and a simmering stew  and I like things all warm and fuzzy. Just like the squirrels in our tree, I like to hibernate at times, keep things the same season in, season out, year in and year out. Change comes with hard work and discomfort and yes sometimes pain even if it is just a pain in the you-know-what, but change is inevitable and necessary for us to grow as human beings. So while mother nature is slowly wriggling out of  her winter wear and all around us, are  signs of nature changing over to Spring and Summer,  so too I have been embracing change here in my kitchen.

The first major change this year, was that I became a traveling mom to various cities and venues to do public demos and motivational talks and I must say, it has been so amazing, I have met the most amazing people, grown so much as a professional  and yet it was also  very difficult for all of us to adjust. Dad had to take om mom’s role and  mom had to learn to trust dad with mom’s role!

My blog, although not updated and worked on as regularly as I would have liked to also had some major changes.  First I was  awarded Best Local Foodblog in the 2012 Eat In Producers Award and in September ( on my birthday to be exact)  Eat Out gave My Easy Cooking  a top spot in their list of 30 best food blogs.  In celebration we decided to give My Easy Cooking a new jacket which of course you are looking at right now! This change has been the most painful one.  Moving 600 posts over to another platform without losing anything, resizing pictures and re-categorising every post, was just such a tiresome and lonely thing to do. At the same time it was a necessary journey to see the growth and progress of this blog. I really hope you like it, actually I hope you LOVE it as much as I do! Help us to make it better by telling us what you think,  what you don’t like or how we can make your search for easy delicious meals even better!

There are still many things happening that I have to keep under wraps for now, but  one major change that I just can’t keep under wraps any longer and one that has kept us busy for a good few weeks this year, has been the filming of  the  reality cooking series Dinner Divas! Wow, what a learning curve and boy-oh-boy did I have to change!  I am sure this Saturday (13 th October) when it  kicks off on SABC 2 at 8.30, will be just the beginning of  another beautiful journey for My Easy Cooking. As long as we are forever open to learning and change…….

So, with all this changing in mind, I thought, why not take a winter classic like Snoek and Patat and turn it on its head  for a vibrant Smoked Snoek Salad for summer. Keep all the comforting flavors of winter, but strip it of it’s warm winter coat and serve it cold with a tangy, lemony dressing!  The “change” worked and the salad was superb, which is proof to me that not all change is bad, we need to just embrace and not fight it sometimes, certainly a lesson I have learned in the last couple of months!

Smoked Snoek Salad

Serves 1- 2

Ingredients

200 gr smoked snoek

1 cup white and red grapes – pitted

fresh rocket

2 thick slices of sweet potato bread

Dressing

It is important that all the ingredients must be at room temperature

1 jumbo egg

1 t Dijon mustard

1 T lemon juice

zest of 1 lemon

salt and pepper

1 cup sunflower oil.

Method

First make the dressing. Place all the ingredients in a tall plastic jug or glass. Start with the egg and then add all other ingredients on top. Place your stick blender into the glass, covering the egg. Start to process the mayonnaise on medium speed and as it emulsifies, start moving the blender upwards until all the oil is incorporated and you are left with a luscious thick lemon mayonnaise.  Thin with some cream of yogurt and keep one side while you make the salad.

Flake the snoek and remove all bones.  Place a thick slice of sweet potato bread in a pretty plate. Top with fresh rocket. Now add the snoek and the grapes and just before serving drizzle with the lemony salad dressing.
