Ham Brie Peppadew quesadillas on RSG

“Ham Brie Peppadew quesadillas “, was my quick answer to my husband’s question: “What are you doing tomorrow?” Little did I know that eating and cooking with Emma would be such fun.
Something so simple as a Ham Brie Peppadew Quesadillas could bring two people together!
Eat with Emma is a food blog and a wonderful and informative one too! As with all the other fabulous bloggers who come to cook with me from time to time, Emma also arrived as a complete stranger and greeted with a firm handshake, only to leave a couple of hours later with a big fat hug and a promise to do it all over again soon! Food does that to people….. breaks down all barriers!
What amazes me more than Emma’s passion for all things food related, is the fact that she lives here in Cape Town, right under my nose and I did not know about Eat with Emma, until of course the wonderful world of Twitter introduced us ! Her blog Eat with Emma is as fresh and dynamic as the author herself and although she does not think of herself as a chef or something really extraordinary, I will leave the judgement of her work up to you……. not convinced…..check this out!
You can read Emma’s bio here, but if you want my two cents worth, Emma’s passion and her drive will take her where ever this foodie journey may lead, but whatever it is she does or will be doing in future, we will know about it, because you cannot keep a good thing down and to Eat with Emma is a good thing!
Emma and I chose a very simple recipe for Ham Brie Peppadew Guesadillas Quesadillas, because the season for easy entertaining is upon us and this is definitely something you can whip up in now time and also the ingredients are something you can keep in the freezer or fridge to make life even simpler. Although the filling for the quesadillas are not at all Mexican, we decided to fill them with something most South Africans will love……. Ham Brie Peppadew Guesadillas. Of course our brie of choice Fairview Brie Ripe&Ready.
Ham, Brie and Peppadew Quesadillas
Serves 4 as a main course
Ingredients
4 flour tortillas
125 g thinly sliced Gypsy Ham
2 x 80 g wedges Fairview Brie Ripe&Ready
any good quality chutney – we used Peppadew chutney
a little olive oil
a handful of fresh coriander – chopped
Method
Heat a pan ( big enough the fit the tortilla) on the stove. Take a pastry brush and brush the inside of the pan with olive oil. Place a tortilla in the pan and slice ½ a wedge of brie and place in a circle on the tortilla. Spoon some of the chutney over the cheese and then top with a few sliced of ham. Sprinkle some coriander over it and cover with the second tortilla. Allow the tortilla to brown at the bottom and then turn it over to brown the other side. I use a plate to do this.
Slice the quesadillas and serve with more fresh coriander and a dollop of sour cream.
