Easy vegetarian Butter Bean Dip snack

This healthy butter bean dip or pate (depending on how you look at it) will never make it to the top 10 list of difficult recipes to try, nor will it win it’s creator any Michelin stars, but quietly and very unpretentiously here in one corner of your snack table, the Butter Bean dip will make a very delicious statement and it might even gather a hungry crowd all and aaa-ing while grabbing another biscuit to have more of this healthy dip!

I am often asked  for all kinds of healthy recipes, no sugar, low-sugar, no fat, low-fat, no nuts, no meat, no carbs……and often all this means to me, is NO TASTE. Sadly this is most people’s perception of healthy foods, that it lacks taste. Another dilemma that I am often faced with is healthy lunch time snacks to feed my kids when they come home from school.  We eat our main meal at night so at lunch I do not want to let my children eat another animal protein if I can help it and that is how I got to this butter bean dip idea. The idea of a butter bean dip or pate is definitely not my idea as the internet is loaded with recipes. Allow me to show you two ways to prepare it…..totally different taste sensations! You can opt for the Greek flavors of basil, garlic, olive oil, lemon and chili or you can go the Middle Easter route with cumin, coriander, garlic and paprika. Why don’t you make both versions of this healthy Butter Bean Dip and let me know which one you prefer!

Today we had a delicious roasted Aubergine cream (similar to this Butter Bean Dip) on an Aubergine stuffed with lamb. Look out for this recipe shortly and thank you for dropping in.

Easy vegetarian Butter Bean Dip snack

Healthy Butter Bean Dip  # 1 – Greek Flavors

Makes  1 small bowl full


1 410 g Rhodes Butter Beans

1 clove garlic – minced

juice and zest of  lemon

salt and pepper to taste

1 very small chili – chopped

60 ml extra virgin olive oil

1 handful of fresh basil


Place all the ingredients in your food processor and blitz  until the butter bean pate has the texture and consistency you like. Taste and adjust seasoning. Spoon into a small bowl and drizzle with olive oil and serve with warm pita breads.

Easy vegetarian Butter Bean Dip snack

Butter Bean Dip #2 – Middle Eastern Flavors

Makes  1 small bowl full


1 x 410 g Rhodes Butter Beans

2 cloves garlic – crushed

juice and zest of 1 lemon

1 tsp ground cumin

1 tsp sweet paprika

1 T tahini paste

2 T olive oil

2 T chopped coriander

salt and pepper


Place all the ingredients in your food processor and blitz until the pate has the consistency you like. If it is too stiff, add a little more olive oil. Season to taste. Spoon into a small bowl and serve with crackers or flat breads.

    This might not make my top 10 list of difficult recipes to try but it is definitely in my top 10 healthy dip recipes to make.
