Exam time nibbles

It is exam time! At least in our household it is. It is the time of year when I walk around with a permanent knot in my tummy and a dry mouth from stressing over my children and their studies. Not that I have reason to stress, they do reasonably well and only need a “little nag” now and then to get to their books. My children however also see exam time as snack time and during every break they take, I have to hear…” mom, I’m hungry!” Their brains need all the help it can get so I try and keep snacks healthy, filling and nutritious…….oh ok, most of the time!
I have decided to put together a few of our favorite exam time recipes…… some healthy for the brain and body…others just because I am a mom who loves spoiling! So let’s start with the important recipe first….the one for spoiling! This cake I baked on Saturday, totally off the cuff, no recipe, just the ingredients I had at home. It was delicious then and today there is a piece in each lunchbox for breaktime. So bring on the exam time…we are so ready!
White Chocolate, Almond and Coconut Cake
makes one 23 cm round cake
Ingredients
Dry ingredients
250 ml ground almonds
250 ml flour
250 ml sugar
10 ml baking powder
250 ml dry coconut
2 ml salt
125 ml white chocolate chips
Wet ingredients
zest of 1 lemon or lime
100 g butter – melted
125 ml milk
3 jumbo eggs
Method
Mix all the dry ingredients in a bowl. Whisk all the wet ingredients together and add to the dry ingredients. Mix and pour into a pan which has been sprayed with Spray n Cook. Bake for 35 minutes or until a skewer comes out clean when inserted into the cake. Serve with thick Greek yogurt or cut in squares and keep for exam time nibbles!

My children love eggs in any form, shape or size so a boiled egg for lunch normally does the trick. It is filling, nutritious and delicious to. So for us it ticks all the right boxes…
