Tropical Cheesecake, a cat and an Eat Out survey in the mix for RSG.

Baked cheesecake has a crumbly texture that reminds me of curd. For those of you who do not know, curds are the solid parts of soured milk that can be eaten alone or used in various regional dishes. Some people deep-fry the curd to eat as a snack and call it  “squeaky” cheese. I like that crumbly goodness in this cheesecake. 

I love the fact that simple pantry ingredients like condensed milk and a few staples from your fridge can be transformed into a baked cheesecake. What I love about this baked cheesecake, is that it can be baked and served in individual portions. It is very similar to the cheesecake  I referred to recently and it seems  as if this Jewish cheesecake recipe is the favorite baked cheesecake recipe around.

When I asked Tami Magnin to be my guest on RSG tomorrow and send me a recipe with maximum 5 ingredients, she was so prepared and ready, I could have said to her the show was that afternoon and she would have been ready. Tami says: ” I am the sole breadwinner in a family of 4 which means that I have a very small budget that needs to stretch to meals and treats that will fill tummies with good, nutritious foods so that my children can grow to be “big and strong” .

So Tami’s cooking is  a perfect fit for My Easy Cooking because around here we also try to do things the easiest and most economic way (well, most of the time!)


Tami was also a participant in the Dinner Diva Show and it was there under the spotlight where we grew closer and got to know each other a little better. Rumtumtiggs is a blog for mommies and those who cook on a tight budget. By no means does this mean Tami cuts down on taste and flavor. Her  children must have the most delicious lunch boxes in their school, because she is forever baking treats, filling up her cake tins.

People have asked me where the name Rumtumtiggs comes from so I decided to explain it here. Rum Tum Tugger is the name of one of the cats mentioned in the T.S. Eliot poetry book Old Possum’s Book of Practical Cats, published in 1939. In the musical CATS, this character has a song where the chorus goes:

The Rum Tum Tugger is a curious cat

And there isn’t any need for me to shout it

For he will do as he did, do

And there’s no doing anything about it

This, combined with the character of Tigger from Winnie the Pooh is the kind of person I see myself as. And that is how the name rumtumtiggs came about!

I tweaked Tami’s recipe and it is actually all her doing, she mentioned something about passion fruit and I saw a light bulb with a huge banner underneath it that said: Tropical Cheesecake!


Tropical  Cheesecake

Makes 1 cheesecake or 6 individual cheesecakes


250g creamed smooth cottage cheese

397g full cream sweetened condensed milk

80ml fresh lemon juice

5ml finely grated lemon rind

250ml fresh cream, whipped to stiff peaks

125 ml toasted coconut

4 granadillas – or used tinned granadilla pulp



Preheat oven to 180 degrees. Mix together cottage cheese, condensed milk and lemon juice. Set aside to thicken.  Beat cream to stiff peaks and slowly fold in the thickened cheese mixture and mix well. Add lemon rind and transfer to a prepared baking dish/silicone moulds or glass jars. Bake for 10 minutes (5-8 minutes for smaller containers) until just set. It will still wobble when you remove it from the oven but will set while standing. Set aside to cool before transferring to the fridge to chill before serving. Serve with the toasted coconut and granadilla pulp.Eatout

Eat Out and Speak Out…Online

Eat Out is inviting its audience of food lovers to have a say in the next step of the brand’s evolution, through an online survey on, which will go live on 20 February. Initiated by New Media, the company behind the Eat Out brand, the survey will gather feedback from the South African food community, which will serve to play an important role in shaping the brand in the future, says Aileen Lamb, incoming General Manager for Eat Out.

The survey will cover all facets of the brand, including the website, weekly e-newsletter, Twitter, Facebook, Pinterest, annual glossy magazine and the Eat Out Restaurant Awards. It will be publicised through the Eat Out website, which has over 140 000 unique browsers and the weekly newsletter, which reaches 25 000 subscribers.

The online survey is part of a 360˚ approach to elicit feedback from SA chefs, restaurateurs and media as well as the Eat Out audience. “While we’ve always been proactive about engaging with our audience, we’re now embarking on a full-out public campaign to get everyone’s point of view, so that we can grow Eat Out from a well-established and respected brand into one that even more vibrantly and usefully links the South African food community,” said Lamb.

“The online survey is open to anyone, and we encourage all Eat Out fans to participate.  The results will form part of the brand’s strategy and direction, and we hope to get a significant response to this call for feedback.”

The results of the survey will be announced in March 2013.
