Beetroot and Feta Salad – perfect for a Monday detox!

Beetroot, most probably the vegetable I love more than any other vegetable! I love the boldness of it, the color, the texture and the almost earthy taste! Some foods are just better with beetroot, like my mom’s tenderized steak and green bean stew, dishes that would just be well, incomplete without the sweet-n-sour addition of grated beetroot salad.

Beetroot,  belongs to the Chenopodiaceous family. The health benefits of beetroot can be attributed to its richness in nutrients, vitamins and minerals. A glass of beetroot juice with maybe a stick of celery and a green apple in the morning will definitely put a bounce in your step and take the gloom out of early morning rising. For your children sneak a chunk of beetroot into their strawberry smoothie and they will be none the wiser but you will know they had their vitamin boost for the day!


After a weekend filled with all kinds of deliciousness at the Taste of Cape Town, I am sure everyone feels a tad hung over from too much eating and drinking  this morning and swears to never ever overindulge like that ever again! It’s ok,  I believe you, but be warned the Cheese Festival and the Good Food and Wine show is just around the corner…..

For today however, I can help you out with a beetroot salad, perfect for a Monday detox! The pigment that gives beetroot its colour, beta cyanin, is an antioxidant that speeds up detoxification in the liver. This again enables your body to turn the alcohol into a less harmful substance that can be excreted quicker than normal.

Beetroot contains betaine, a substance that relaxes your mind and is used in other forms to treat depression and contains trytophan which is also found in chocolate and contributes to a sense of well being.

Two very good reasons to hurry and get some beetroot, won’t you say?


Beetroot and Feta Salad

Makes as much as you like, but this is for 6 beetroots


6 beetroots

1 white onion

100 g feta

80 ml sunflower seeds

10 ml olive oil

5 ml barbecue spice

a handful of wild rocket leaves

For the salad dressing

60 ml olive oil

20 ml red wine vinegar

salt and pepper

5 ml sugar



Cut the leaves off the beetroot and place the beetroot in a pot and cover with water. Bring to the boil and cook the beetroots until you can easily stick a fork into it. Remove from the water and cool slightly. Once you can handle the beetroot, remove the outer skin, it easily slips off. Keep one side.

Heat the olive oil in a pan and add the sunflower seeds. Toast the seeds and add the barbecue spice. Remove from the pan and keep one side.

Make the salad dressing by mixing the olive oil, red wine vinegar, salt, pepper and sugar. Taste and adjust to your liking.

To assemble the salad, slice the beetroot and place on a salad platter. Slice the onion and scatter the slices over the beetroot. Crumble the feta over the salad. Drizzle the salad dressing over the top and just before serving scatter the spice sunflower seeds over the top.

    You don’t mention when we add the feta… But that’s a good thing cause I would have eaten it while the Beetroot was cooking MMMMMMmmmm… This on a bruschetta… 😉

    Ons is so gelukkig om in Kaapstad te woon! Ek sien baie uit na die Kaasfees om vir jou en Nataniël weer in aksie te sien! Gaan Jenny ook weer daar wees die jaar? Ek sal meer as een dag moet detox na DIE naweek! 🙂
